The head is a Solid Thing. I mean, the top of the head remains parallel with the rim of the glass when I tilt it. Jeez. Tiny, fluffy bubbles of eggshell white string out into webs that slide back into the liquid after a swirl. Ample carbonation, medium clarity to this ochre brew with pumpkin-yellow highlights. Yeast pour adds a nice murk. Smells like floating face-down in a vat of tapioca or banana cream pie. Malt aromas conjure buttermilk biscuits with fruit syrup and whipped cream; finishes with a hint of nutmeg (?) where I would prefer more spice. Light, smooth, appetizingly dry nosefeel. Taste it... unhhh. Banana cream with banana syrups and liqueurs. Full, dried apple body supporting impossibly rich pureed bananas, french vanilla, Bananas Foster, banana breakfasts, etc... to a finish of fresh plums and black pepper. Wonderful, but again I want spice. Exceptionally viscous and savory body starts creamy and full on the tongue, developing a wheaty wetness and light carbonation, ends dry. The brew seems geared towards filling a belly rather than quenching a thirst. Awesome hefeweizen, 964 years in the making.
