Poured from a 500mL bottle into my Ayinger weizen glass. Bottled 2/06/2009 (bottle code "6069"), so this sample is over 6 months old.
Liquid is somewhere between pale old gold and selective yellow, cloudy, and topped with an initially gargantuan head of foam which while thick recedes to less than a finger in height, leaving cresting waves of lacing behind.
The most balanced aroma of any weissbier I've encountered, the perfect marriage of phenols and esters. Banana and strawberry present first, followed up by pepper and clove. Textbook.
Sipping leads to an intensification of the aromas on the palate, leading into the complex flavors of freshly baked, artisan whole wheat bread, with a hint of allspice and citrus (lemon, orange) in the finish. Lovely.
Medium-light bodied, fairly creamy, but very refreshing due to the high carbonation.
One of the very best expressions of the style. While I sometimes prefer something less balanced (weird as that may sound), this is very nearly the platonic form of hefeweizen.

Poured into an IPA glass, or cervoise glass?
Look: Cloudy rusted wheat body. Pure white head with great retention and spots of lacing.
Aroma: A lot of wheat, malts, banana, and even faint strawberry or other tart fruits.
Taste: Very grainy and malty up front. The banana is subdued and there is a pleasant spiciness I find in the taste.
Mouthfeel: A bit bright, carbonated.
Overall: Just absolutely solid.
