nobody on this site seams to review a beer and give it there perfect rating. I have tried many different Hefeweisse biers for about the last 6 years as well as my own and have found that this example is the best.
it is said that this brewery has the earliest established date for brewing a wheat beer. however, this does not mean that all others should be judged by this breweries product. that said, this beer displays all of the characteristics of a bavarian wheat beer.
the appearance after pouring the beer and its sediment is a hazy light yellow with a full white h ead. the head or lacing, permeates through out the drinking of the beer.
smell is of musty bubble gum (banana and clove)
taste is both banana and clove and earthy.
it has a slight lean towards the bitterness of earthy hops and yeast than most, but in my opinion is the epitomy of german weisse bier.

Poured from a 500 ml. bottle into a Duvel Belgian Tulip glass.

Appearance: A semi-aggressive pour yielded a fluffy off-white 2” head, reducing to a thin ring. Lacing was clearly present, sticking to the side of my glass indicating the original head height. This beer poured golden yellow in color with definitive murkiness to it.

Smell: The classic Hefeweizen banana and yeasty aroma shines through, with a zesty citrus wheat finish. Clove is also present with a honey-like sweetness.

Taste: I can see why this beer rates so high among the Hefeweizens on the market. Banana dominates, with spicy wheat malts, honey, coriander, cloves and hint of lemon zing too. What a wonderful combination of flavors on the palate.

Mouthfeel: Light to moderate body with lively carbonation makes this an easy drinking beer. Very smooth, creamy and balanced on the tongue.

Overall: Outstanding Hefeweizen in every single category. This beer, by far, ranks up there at the top of its class. At only 5.4% ABV, this makes for the perfect flavorful all-year-round session beer. I can imagine this being quite the quencher during the summer months but if I’m being totally honest, I’m enjoying the heck out of this in the middle of February. I'm glad I committed to buying a few bottles of this. Well done Weihenstephaner, well done…

A: Wow. Lucius creamy 2 finger white head. Small bubbles lead to an amazing texture on the head. Hazy, yeast driven look. Straw to golden in color.

S: German phenols. Banana and clove but without the Belgian additions of strength. I love how subtle the German strain is in comparison. Also, this beer has a great bready quality to it.

T: Rich creamy head to a bread malt backbone that is sweet as well as clovey. I enjoy the banana esters as well as the beer finishes. I am such a fan of the tastes as they are balances and well thought out.

M: Perfect to style. Medium bodied. But light in complexity. Crisp enough to fend of stylish fish dishes but delicate enough to be overpowered with spices.

O: This is another fantastic German Wit. I am biased because this is one of my favorite styles but this is a great drinking beer. The German subtitles and balance really make me excited in comparison to the Belgian strength and extremes. I align more so with balances and crisp flavor than over the top yeast attributes.
