Our Korbinian, the full-bodied, dark Doppelbock with light brown foam, wins beer-lovers over with a balance of fruity hints of plums and figs, a dark malt aroma - reminiscent of toffee, nuts and chocolate. Its roasted flavour goes well with smoked meat and fish as well as venison and poultry. Brewed according to our centuries-old brewing tradition on the Weihenstephan hill.

A - Pours a dark brown with reddish/orange hues. Head is great, thick and uniform, about one and half fingers, lacing is great around the glass.

S - Delicious. Huge range of bready aromas, sourdough, rye. Strong malt smells with subtle spice ( maybe from the noble hops?) Also dark fruits, dates, figs and raisins.

T - Huge bread flavours from the malts, taste is almost identical to the nose. All the dark fruits are there, so is the subtle spice aroma/flavour. Interested to know what the choice of hops are for this beer. Flavours are ongoing into the finish which seems to last forever.

M - Perfect. Greatly balanced, velvety, no alcohol present despite its 7.4%.

D - I could drink this like water. The flavours really seem to agree with me. This has been one of my favourite beers/doppelbocks for a long time, i'm glad I finally reviewed it! In my opinion its Weihenstephaner's best beer.

A: Pours a deep reddish-brown color with some garnet highlights. Slightly redder than cola-colored. The tall, densely foamy head has a tan/khaki color and sturdy retention. Sporadic rings of foamy lacing stick to the glass.

S: Some dark malt up front - a bit of cocoa and brown sugar/toffee. Nutty and slightly leathery. Big fruity notes of cherries, red apples, and dates. A faintly herbal hop presence.

T: Firm, sweet maltiness up front, with cocoa, brown sugar, and toffee all having firm flavors. Quite nutty - walnut/pecan character for sure. Lightly earthy/leathery, which complements the fruitiness very well. Cherry, apple, and dark fruit (ripe plum and/or date) are all notable. A balancing bite of herbal hop bitterness sends things off the right way.

M: Medium-full body. Carbonation is lush and smooth. A sticky, somewhat coating mouthfeel with a big, riding aftertaste and slight finishing dryness.

D: This is an amazing, highly complex doppelbock from Weihenstephaner. Bursting with flavor and character on several levels. Excellent and heartily recommended. A must try if you haven't already.

Once again, thanks to Stein for the excellent selection at the store.
Poured into my hefeweizen glass.

A: Pours mostly a deep ruby hue, kinda brownish looking with orange, gold highlights around the bottom. A good amount of head falls fairly quickly into a uniform medium layer on top. Light tiered lacing sticks around the rim of the glass.

S: This has quite the bouquet! Nuts, dark fruits, toasted grains jump out all over the place in a harmonic display of boldness. Simple, yet exquisite.

T: The smell is only exceeded by the taste. Oh so good. This may be my new favorite doppelbock. All sorts of nuts, dark fruits like plums, raisins, prunes splash the palate with fury! Toasted and slightly roasted grains make their presence felt as well as some lovely chocolate notes hitting the perfect balance. Yes, this is my new favorite doppelbock.

M: Oh lord, I would give it a 5, but there is just a touch of harshness in the beginning. Even so, I'm still inclined to give it a 5, but I do see just a hint of room for improvement. Therefore 4.5. Smooth, slightly creamy, and leaves my mouth feeling like I was drinking heaven.

D: All night long.

Appearance- A very dark brown; light can only pass through it at the edges of the glass. Thick, creamy tan head.

Smell- Rich, full aroma. Soft, nutty, and tangy. Pleasantly aromatic malt backbone; smells of toffee, oatmeal, and some cocoa. Raisiny, tangy overtones give it a twang.

Taste- Loads of malt up front. Smooth, subdued caramel-toffee flavors lead the way. The taste becomes more complex as the beer passes by; the malt flavor gradually dries, becoming more like buttery whole wheat bread. Luxurious, sweet, estery undertones carry the beer home, leaving the tongue coated in tangy fruit flavor as the dryness in the malt peaks. Alcoholic spice burns the back of the throat (just a tiny bit) on the way down.

Mouthfeel- Bulky, yet incredibly smooth and creamy. It doesn't get much better.

Verdict- Sit back, and let this beer take you to a very happy place. A benchmark doppelbock for sure.

A deep, dark, opaque ruby-mahogany in color (with a cream/caramel head), this beer is strong on the coffee and cocoa notes (most especially the former), both in the aroma and the flavor. There is a malty, brown-bread body to the flavor, with a dried fruit sweetness behind it all. It has all the richness that a dark beer usually has, but sits much lighter than it looks like it will. The feel is smooth, yet lightly effervescent. It pairs just as well with rich food as it does with drinking by itself. I'm not usually a dark beer man, but this I could drink pints of.

Pours a deep russet under a sticky bone head. A nose of puff pastry drizzled with maple syrup and stuffed with whipped chocolate cream that segues nicely into a beautiful velvety textured flavor that's like chewing chocolate covered roasted almond pillows with a smooth caramel center. A small hop finish keeps the huge malt spine contained, barely. Weihenstephaner never fails to please the senses and when the hell are they going to brew a Weizenbock?

Korbinian came out to me with a strong 2.5 finger thick head, which was a milky tan color. The body is dark ruby and copper in color, and is cleanly filtered.

The aroma is light, but complex. The typical sweet bready malts are present, but with a hint of a light maple and herb character.

This is the best tasting doppelbock I've ever had. The maple character is very up front, but gets pushed to the side quickly by a mild cherry like flavor. Finally the taste ends on a slightly sharp and herbal note.

Mouthfeel wise, this brew is full in body, creamy, and has a mild oily slickness. The warmness from the alcohol is barely detectable.

Again, this is the tastiest doppelbock I've ever had, and picked up four bottles for home from the brewery to hopefully share with my buds.

A- dark dark chestnut brown with a tiny hint of orange at the bottom of the glass. the foam looks amazing. tan, tightly bubbled, and creamy on top. it's got that whole melting ice cream look. also great retention for the +7 abv. some swirls and curls of lace cling to the glass like broken arches, but ultimately not much sticks long enough to crust over. rings of lace that form as i drink are more like thick gauntlets, and they stick much better than the initial splatterings. is that a bear on the label?

S- huge roasted, toasted, tart, fruity, and savory malt aromas just leap out of the glass. smells very molasses, meaty, and tomato, with cocoa and coffee hanging out in the background. the whole molasses/meat/tomato reference seems to be a combination of acidity, iron, and sulphur, which in food related context sounds more appealing. smells of sourdough pretzel and pumpernickel bread. some toasted caramel, brown sugar, and toffee hides in there too. seriously malty in every way and the aroma becomes sweeter as it warms.

T- the korbinian saturates the palate with complex flavor, surpassing perhaps even the legendary celebrator. all tartness and meatiness and tomatoiness from the nose is removed here, this thing is all about sweet and roasted flavors. milk chocolate and mild coffee, and chocolate milk that has had too much syrup stirred into it (which in this scenario is definitely not a bad thing). caramel, toffee, almonds, brown sugar, molasses, and mild fig-date-prune fruit flavors. somewhat spicy and herbal hop flavors remain intact but are so far behind the malt that they seems to act merely as a peppery accent, giving the roasted bitterness an assist in cutting the big malt sweetness. finishes with cocoa, coffee, and roasted grain flavor and a bit of a cassia spice. or moreover, maybe a chai tea minus the cardamom. lingering hop flavor without the hop bitterness, and subtle sugared dates and caramel. and not the slightest indication of alcohol throughout the whole thing. fantastic.

MF- probably as smooth ans luscious as it can get, feels like heavy cream, with any creamy film being washed away by a soft squeegee of very very delicate carbonation. i mean on the verge of low to very low and it fits perfectly. otherwise, the heavy maltiness and luxurious feel would be horribly disguised. in reference to coating, oh yea, there is plenty of stickiness on the lips, but also a present tannin dryness battling with the sugar on the cheeks to which neither is the victor.

D- on a different planet than other examples of a style that never got me too excited. to have a doppelbock better than this would simply blow my mind. i'm not ruling it out, and i'm sure there may be one out there, but as of now i'm oblivious to it. there's a little too much mineral in the nose, but the taste is so invitingly complex and the feel is so damn soft and smooth that the korbinian kicks the drinkability out of all others. all hail the pack bear.

Sampled tonight on 2/24/14 though had this one a few times in the past. Comes in a single 500ml (1 pint, .09 ounces) bottle. Bottled chilled down to 36 degrees F in my beer cooler and poured into a shaker pint glass.

Pours a very deep brown with about 1+- finger of a beige head that dissipates fairly fast. Just a bit of lacing with each sip. Smells very nice with hints of sweet caramel, malt with a touch of coffee. Taste is really good, just like the smell. Goes down very easy with no bitter aftertaste. I like Doublebock's and this one is no exception and didn't disappoint at all.

It pours a clear dark brown with ruby highlights and a tall, dense tan head. Aroma is rich with caramel, raisins, bread and slight roasty undercurrents. The palate is doubly as rich as the nose with the perfect amount of clean bitterness to cut through the maltiness. A truly wondeful beer- not a misstep along the way to the lengthy roasty finish.

Poured into a trademark 500ml mug at Suppenküche! I was very excited to revisit it, as it had been some time since I last had it.

Pours a darkened, ruby-amber color, almost to the point of appearing violet, as many of these beers do. Although to date I'm yet to find a doppelbock that does it as pleasing to me as this one. Lots of bubbles are visible at the bottom, as well as when placed against the light. A bone white, foamy head that's 2 fingers large crowns the top of the glass, and never seems to fully dissipate, no matter how much I let this sit. Very viscous and thickened and hearty, and nearly everything I could ask for in the style. Good, cobwebby lacing. Excellent delivery as always from these guys.

I've only had great experiences so far from the bottled versions of this beer, but on tap, this seems to be a completely different beast. Right at the nose, I get an instant jab of hearty, sweetened flavors, ranging from plums (but more towards prunes), figs, slight raspberries, slight molasses, a lot more clove than expected, and earthy, pungent hops as well as a bready, malty texture. Not as malty as I expected, however, and definitely not too bitter or sweet. Indeed, the dark fruits combined with the clove and syrupy goodness really meld well together here, coming spades, but never overpowering each other or throwing anything off. The bright, hoppy profile is really winning me over, although the warm malty flavor makes this close to resembling freshly baked bread. Terrific.

Honestly, I really can't take a sip of this without giving it a near perfect score right away. If this is the German Rochefort 10, so be it. Right at the front, there's a juicy array of dark fruits, from plums, to raisins, to figs, to slight faded cherries, slight caramelized bananas, only to be followed by a variety of spices that compliment them very well. Clove, rosemary, light molasses, caramelized orange peel, slight peppery flavors, and deep earthy hops. Surprisingly crisp and bright, especially in contrast with how thick and roasted the malts are, as well as in light of the spices. Nothing really conflicts here, except for perhaps a slight sweetened syrupy texture that breaks the flow a bit as this warms up. Extremely easy to drink, which makes this a scary beer indeed depending on the serving you get, as well as the high ABV. The alcohol eventually hits you, but it's a pleasing sensation, and almost resembles a well integrated rum flavor. Chewy, well carbonated. A near perfect drinking experience.

God, what else is there to say about Weihenstephan? Everything they churn out is world class, and this one stands tall against it's often cited hefeweizen. It's an opposite drinking experience in many ways (in flavor, not quality), but it stands as juicy, thickened, and filled with all kinds of flavors that work so well together. In the bottle, it's a little bit more bitter and medicinal, but on tap, it's a bouquet of the best aromas the doppelbock style has to offer. I'll be tasting this one for days!

What can you say about the boys from Freising? Korbinian is another in a long list of phenominal beers from Weihenstephan.

Korbinian pours a dark brown with with an off white/tan creamy head that is retained for as long as you take to drink it.

The aroma is malty, and reminds me a bit of bread pudding with a slight raisin, cinamon finish.

The taste however is not as sweet as you might think. Which for me is a good thing, as some of these heavy malt beers become too much like desserts. This beer comes across smooth, very smooth considering the alcohol content. Nice malt character, with just the right hint of hops on the finish.

I love the beer and I think you will too.

In the aroma is rich, pronounced maltiness akin to toasted bread crust and molasses with a slight chocolatey undertone. The body is dark brown/mahogany with deep ruby highlights; it has a creamy khaki head which leaves lots of lacing. The flavor is smooth with lots of roasted, somewhat chocolatey malt. It's sweet but not overly so with prune-like fruitiness, a spicy accent, and just a little woody bitterness. The finish is deliciously grainy sweet. The body is medium-full with plenty of carbonation and considerable bite; the alcohol is hardly noticeable.

All-around solid. Intense but very drinkable. Smooth and frothy but crisp. Rich, flavorful, and satisfying with lots of delicious malt and dark fruitiness. The 7.4% ABV is very well hidden.

Appearance: Dark chocolate brown, with low visibility. Spectacular 1 inch head, lingers for well over 5 minutes. Low/medium viscosity.

Aroma: Deep nose of chocolates, raisins, a little toffee and blood plums. No unexpected developments - mainly sweeter chocolates.

Taste: Wow. Toffee, coffee, mild raisins, and with roasted soy nuttiness. Great front palate malts are balanced by a good hops/chocolate malt finish. Chocolate developments on the front palate. Deep molasses, with a nice roasted sweetness and raisins to the finish. Metallic peppery notes keep the finish a little bitter and cleansing.

Mouthfeel: Perfect doppelbock body, as it's not too heavy and has a perfect malt emphasis. Malt finish is balanced by the mildest hops flourish. Great bready aftertaste. DOes get a little heavier as it warms.

Drinkability: Definitely tends toward the heavier, more bitter end of doppelbocks, but remains an exceptional contribution to the style. Pushes in all the right directions and remains exceptionally drinkable. Fantastic.

I love this meaty doppelbock. Rich color and pour, lots of fruit and even a hint of carmel. It was a wonderful variety from Weihenstephaner, a true bavarian doppel. I drank it with hot nuts (no comments please) and some other finger food. Very good pair with savory foods. I will be on a search to find this at my store. Great high ABV too, just right for a winter night.

This one caught me by surprise, it was so good. I had read the reviews and expected an exceptional Doppelbock, but I did not expect it to be as close to Doppelbock perfection as Ayinger Celebrator is. It has a clearer color with a bit more amber light coming through. The Korbinian has a little less chocolate and pehaps a bit of caramel in its place - but it is not what I would call sweet. It is a bit nuttier than the Ayinger, as well, but has a lighter mouthfeel at the same time. The fairly potent ABV is well hidden, and for some reason this beer went down smoother and quicker than the Ayinger.

This is simply a fantastic beer, more available than the Ayinger (at least where I shop), and a little less expensive. It's not a replacement, but it's a very close second in my book.

Korbininan egresses from the bottle a charcoaly rust-colored brew that whips a moderate head and leaves suspension bridges of lace on the glass.

Above the snifter wafts a pungent aroma of toasted walnuts, dark cherries, fruitcake, and an overall sense of richness. The maltiness of this brew is imposing and regal.

This beer is flavorful, complex, and incredibly harmonius. Its hard to tell where one flavor begins, another sprouts up, since they are all locked in such a stage of convergence. Intense maltiness - as realized on the tongue as toffee - nuttiness, and dark fruits are the key elements which constitute this stately, luxurious beer.

As with the flavor, the mouthfeel of this beer envelops you. It is incredibly rich, smooth, glides on your tongue and disappears like a whisper in the night. For such a weighty beer, it is as spry and silken as anything I've experience. Drinkability is high, but its sheer girth forces you into moderation.

holy shit this stuff is great. had a couple of .5Ls with my bro in the Weienstephan brewery garten over a world cup game along with our meal, and goddam. this may be about to be the highest rating i've given a beer

fluffy head released one of the greatest aromas ever. malty character revealing toffee and brown sugar and chocolate

equally pleasing flavor, with a hugely rich molasses and chocolate and caramel profile. it's not very complex but so thick and maltyummy that i just don't care

Sometimes, you get a beer so complicated you need to go item by item. Here we go:

Appearance: Very dark, very shiny. Damn, but I love how dark beers look sometimes. A wonderful red tinged blackness to this one.

Smell: Fruity, toasty, and remarkably, almost absurdly malty.

Taste: Malty like crazy, but unusually fruity. Tastes like malted prune juice. Didn't like it at first, but after half a glass or so it starts growing on you. It has a unique earthy sweetness which has its own unique appeal. Definately for those who like to try new things.

Mouthfeel: Don't even know where to begin. All parts of your mouth feel something. It's sweet, it's sour, it's malty.... it's complicated.

Drinkability: This one's a heavy beer which begs to be paired with heavy food. I had it over bratwurst and kraut, and can't imagine drinking it with anything else. Hearty doesn't even begin to describe it. A brewery doesn't last since 1040 for no reason, I guess...

Wow. No faults here. Perhaps it's too smooth? This miracle beverage pours very deep, pretty mahogany with thin off-white top. The aromas of plum, molasses, and malty goodness are about as good as it gets. Almost don't want to drink it. Yeah right...the same delightful notes carry through into the flavors. The mouthfeel is creamy and perfectly under-carbonated. I could drink this by the gallons. My only conceivable complaint? Could be a little stronger. But, that's silly.

As a double bock fan, this is simply one of the best of its kind. The color is a dark amber that is extremley sharp with a white creamy head. The smell is loaded with malt, chocolate, raisins, and other fruity goodness. The taste begins as slightly bitter but quickly is overtaken by a sweetness explosion that lingers on the palate. Goes down so smooth and would be great with a a chocolate or fruit desert. This is my kind of beer, and would gladly pay another $2.59 for a 16.9 oz bottle. Look out Ayinger Celebrator, you have company.

As dark as any stout. Minimal head, but with good retention in my Unibroue glass.

Lovely sweet nose. The definition of a malty beer. Smells as good as, if not better than, Celebrator.

Truly delicious. Sweet, chewy, deep, dark, rich. I could see this pairing up perfectly with some moist velvety chocolate cake.

In midsip I get a tiny bit of something that seems off. A slight thinness? Maybe that's just normal for this style. Maybe its the water used.

This beer is guilty of YUM in the first degree. Seconds, please.

Grabbed this from my local whole foods. Normally I reach for the German wheat beers, but with it being March and the bock season I said why not. I was glad too. Originally cracked this open to offset the firey taste in my mouth from what I was cooking. Was taken aback as this wasn't what I thought it'd be. It was an excellent semi milky, sort of sweet, brown sugary brew. Brown in color as most bocks are there was a hint of malt in it, not the coffee, chocolate malt, but more of a toffee, carmely flavor. So smooth I didn't dare mix it with the rest of my spicy thai food dinner. Best doppelbock I've ever had!

Deep muddy brown appearance with a slight reddish haze in direct light. Very creamy tan head which lasts down the side of the glass as you sip (or in my case, gulp.)

Smell of sweet malt is to the fore with some raisin toast and faint caramel.

Taste is big and bold similar to the smell. Sweet Malt, Caramel & Chocolate take centre stage but not in an overpowering cloying way. Faint citrus overtones and a dry if somewhat bittersweet finish!

Mouthfeel is creaminess all the way. Nice and light compared to what I was expecting from the inital taste. Near perfect.

The 7.4 ABV is hardly noticable with the great balance of the beer. I don't know if I could drink this all night but I reckon I could give it a good crack!

Visiting Ann Arbour, i found the most amazing beer stores and found this beer, amongst many others. I love their Wheat, thus was super excited to try the others Weihenstephaner offered.

Poured a hazey dark amber brown, wonderfull head (like all their brews).

Smell is beautiful: toasty malt, bread, nutts. Sweet dried fruit. a touch of anise.

Taste: I've honestly never tasted anything like this. Almost like a root beer version of a bock. Root spices along with dark malt sweetness. Bready, sweet. Just amazing. a nice white pepper spice at the end. I must admit, i'm a abit overwhelmed by this one. It has now been added to my top 5 favorite beers.
