Weihenstephaner's Hefeweissbier Dark (henceforth "Dunkel") pours a dark, hazy tawny body that is slightly more translucent than expected when held up towards a dim ceiling light. The head on this beer is big and has tons of staying power. I can't recall the last time I had a beer whose head stuck around this long. I very gently swirled the glass as the beer reached the half-way point, and was delighted to see an eruption of slightly off-white foam.
Cloves dominate the nose at first, though notes of sweet roasted malts and floral hops do manage to assert themselves. As the beer warms, flavors of banana, golden raisins, and apricots move to the fore.
The taste follows the nose at first. At first sip the taste of sweet, roasted malt is just a touch too strong. But as the beer warms, and as the palate grows accustomed to the malt, the bittering hops emerage, and the sweetness recedes and integrates into perfect balance. The last 2/3 of this bottle were perfect. Golden raisins and unsulphured apricots accentuate aromas of clove and ripe banana. The roasted malt and buttery yeast play an important role here. In great Hefeweissbier, buttery yeast and lightly roasted wheat malts generate banana flavors. In this Dunkel, the roasted malt is toasted just enough to create the illusion of a brown-butter braise. The best sips of this beer taste of brown butter braised banana seasoned with a few golden raisins, apricots, ground cloves and just a hint of nutmeg.
It is difficult to imagine improving on the mouthfeel. At first, the carbonation is a bit sharp, just like the spicy clove flavor that dominates the palate. As the beer warms and richer notes of banana and sweet dried fruits come into balance, a gentle swish around the tongue transforms this beer's medium-full body into a mouthful of creamy, viscous foam. A perfect complement to this Dunkel's toasted, buttery flavors.
The fact that Hefeweissbier Dunkel is not my favorite of Weihenstephaner's beers ought to evince my admiration for this brewery. Each of their beers shows the kind of elegant balance that most breweries can only dream of achieving. Do yourself a favor and pick up a bottle.

T: clove, malt, apple, increasing umami as the beer warms
M: light-medium-bodied, smooth, slightly dry
O: best chilled to mask the umami. Good if drunk quickly.
