Collaboration with Three Creeks Brewing Company

This brown ale is brewed with yams, Muscovado Sugar and many bags of marshmallows. We broiled fifty pounds of yams, hand peeled them, then added them to the mash tun. (This is the second beer we have brewed using potatoes!) After we transferred to the brew kettle, twelve pounds of marshmallows were added to the boil.

Draft from prefunk... Pours clear brown... Okay off white head... Nutty/light toasty maltiness... not really getting much yam aroma or flavor, but there are hints of vanilla that I guess are from the marshmallows... Pretty interesting... would be good with food, something a little fatty and salty like ham.

On tap at Payette. ABV 6.8%. Dark copper pour with small, frothy head. Definite aroma of sweet potatoes, but the whole thing comes off as that sticky, sweet yam dish with marshmallow topping. Delicious, would not be out of place at the Thanksgiving table. Nice heavy body, mild savory notes, and a hint of spice at the finish. Thanks!
