Cask conditioned and served in a Dogfish Head pint at La Birreria.

Sofia pours a hazy goldenrod. There's only about a finger of white foam serving as a head for the beer, and it doesn't leave much lacing behind, but it is fairly stubborn in it's refusal to fade away. The nose is fairly citrusy, just like I'd expect from a wit, with just a hint of the peppercorn added. The beer opens with a smooth wheaty note, just a hint of twang to it, before a very pleasant orange citrus flavor comes in mid palate and is the dominant flavor in the presentation. Just when I'm thinking to myself that this has a good, albeit a bit run of the mill flavor profile, a subtle heat from the peppercorns comes in on the close to give the beer a tasty unique twist. The The body though is a problem. More specifically though, I'd say serving it on cask is a problem. The mouthfeel of a wit, with a light body and very active carbonation, is one of the hallmarks of the style. In contrast Sofia's body is overly creamy. It's not by any means unpleasant, but it's not at all what I look for in a wit. Similarly, the carbonation doesn't have anywhere near the pop or liveliness that I'd like to see. I really enjoy the addition of peppercorns to a witbier, I just would be much more interested in seeing a regular draft version of Sofia, because to me wits are one style that don't benefit from cask condition
