Inspired by the rustic Farmhouse-style Saisons of Southern Belgium, Regalia is brewed with barley, wheat and spelt and fermented with Brettanomyces. A sturdy malt character supports the complex array of flavors that the yeast provides, and will continue to develop over time.

L: Poured from a bottle to a snifter glass. Had a brownish / orange color and an extremely cloudy consistency. There was a massive, fluffy, fairly long-lasting head. Very good lacing.
S: A pretty nice aroma of citrus fruit, yeast, barnyard funk, spices, and a grassy quality.
T: Tasted of a decent bit of the standard saison barnyard funk (not overdone), some citrus fruit (lemon, in particular), a little bit of the grassy quality (mostly in the finish; not a big factor), a fair amount of pepper (more up front than anywhere), and lot of Belgian-style yeast (present throughout). This is a well-balanced, focused flavor. Pretty tasty.
F: A highly carbonated beer with a fairly sharp finish. Medium-bodied.
O: In general, a well done, easy to drink beer. Worth a try.

Very good!!! Pours a clear, bright gold color with a huge creamy and bubbly white head. Head retention is very good and there are scattered, small patches of lacing. Good aroma of lemon zest, Belgian yeast and lots of funk. Taste is more of the same except stronger and better. There is plenty of musty, barnyard funk to go along with the lemon and tart, yeasty taste. There is also some peppery spicing that adds to the rich mouthfeel. I have had a few really good American Saisons. This is one of them

Cellared 2 years, 4 months.
Poured into a tulip
Appearance: amber colored with orange hues. The head is a very dense and rocky light-tan that lasts indefinitely.
Aroma: Brett funk with sweet malt that is quite noticeable. The aroma contains apples and an earthiness like wet wood. This beer conjures memories of Normandy and Calvados.
Flavor: the Brett dominates the flavor, but the malt plays a close second. The malt is quite sweet, but by no means cloying. The Brett and malt sweetness are well balanced. This is what I envision a farmhouse beer to be - rather than using "farmhouse" synonymously with Saison.
Mouthfeel: light-medium, but seemingly light considering the beer's 8.5% abv. Nothing spectacular, but no flaws either.
Overall: much better than expected. The Brett is the headliner in this beer and provides a rustic funk. I'd like to try this beer alongside a fresh version to see how the Brett has developed. This is a buy-again, and would certainly be a worthwhile entry in a Brett flight.

In an attempt to coax out some more brett character, I cellared this for 15 months prior to drinking. Of course I had the glass ready when I pried the cap off.
Look - Pale orange color, mountainous foam.
Smell - Lemon, pepper, grass, funk. It hits you right in the back of the nose.
Taste - Mild hit of pepper up front, creamy in the middle, lingering funky aftertaste. Most of the flavor of this beer happens in the aftertaste. More lemon came through as it warmed.
Mouthfeel - Feels a bit on the heavy side at times, borderline slick. Lots of carbonation though, and the finish is very dry.
Overall - As we all (should) know by now, a 100% brett fermentation does not produce a huge funky sour. This is just a nice simple saison.

This one was just ok. It had a really nice mouthfeel with perfect carbonation, but the flavor was just a little basic. It didn't have a lot of big tartness, and was very mild.

Poured into a snifter.
3.5 A: Murky orange rust color. One finger of frothy white head. Retention is a touch below average and a few wisps of lacing are left.
4.0 S: Very pleasant nose on this. Plenty of peppery spiciness right from the start. Earthy funkiness with grassy hay and wildflowers. Peach, apricot, pear, and apple fruitiness.
4.0 T: Again we start with big peppery spicy yeastiness. Fruits per above with more focus on apple and pear. Complex funk covering layers of earthiness, hay, dry wood, wildflowers, and some dank mustiness. Sweet upfront with a drying finish. Herbal, almost lemongrassy, aftertaste.
4.25 M: Lighter medium body. Good moderate carbonation. Pleasantly spritzy and super smooth.
4.0 D: Very nice beer. The spicy yeastiness mixes super well with the funky brett.

From 375ml bottle dated 3/2015 into Pilsner glass. Semi cloudy honey color. Nice thick creamy white head like whip cream. Vigorous bubbles, champaign like. Perfect look 5.00. The betts have really left their mark on the nose. Very sour and funky 4.00. You definitely taste the sweet honey like taste of the Belgian style but then the funky slightly sour side kicks in. Has a syrupy thick sweet aftertaste that is not refressing at all. This is more of a sipper. 3.75. Overall a quality beer that puts a twist on the Belgian style. I personally think it's a little to strong and syrupy tasting for my pallet. I wish I could save the rest to try again in a few days but it looks like I'm committed to it now 4.00
