For my 200th review, I wanted to drink something special that I've had before, but hadn't gotten around to reviewing yet. I picked up two large 750mL corked and caged bottles of this on a recent trek into Ohio. The cork eagerly came out of the bottle with a deafening pop, after which is was poured into a Chimay goblet. The appearance is very dark, clear, reddish brown (like a cola) with a big coarse head that has excellent retention. It never completely left the beer and a lacing of foam remained the entire evening. I expected the nose to be assertive, but it is very faint and delicate. What I can detect is bready and yeasty, like a pastry, with some subtle dark fruit notes (currants?).
This beer drinks like a meal. It truly feels nourishing and sustaining. The flavor is simply off-the-scale. It is full-bodied with a lively mouthfeel from high carbonation. On the front of my tongue I get sweet, bready, yeasty flavors which develop at mid-palate into dark dried fruits like raisins and figs. I also get molasses, brown sugar, cloves, and gingerbread. It has this wonderful sweetness but is never cloying or syrupy or difficult to drink. The only knock I have on it is that the carbonation, while delightful on the tongue, may be a bit too high. I actually thought the beer tasted even better after it had rested a while, degassed, and got a little flat.
This beer has forced me to re-evaluate the need to attend release parties or fight for hard-to-get special releases. Why bother when this stuff is so damn good and so easy to get? It is easily one of the most complex and best-tasting beers I have ever had. I deeply regret buying two big bottles of it. I should have bought a case.

A: Clear tree bark brown, soapy head (this bottle is literally overflowing just upon its opening). Some large debris is visible. Bonus points for the ridiculous head (it won't stop!), but I am a little worried about what happened to cause that/how long it's been on the shelf.
S: Pungent, several inches above my glass I'm still getting strong aromas of plum, mild malt, a touch of sweetness. Very clean.
T: Same as above, hints of caramel in addition. Initial taste is dry, mild sweetness on the finish. No alcohol trace, impressive.
M: Silky, soft, padded, but nowhere near flat. Somewhat astringent. Honestly one of the most impressive mouthfeels I've ever tasted.
O: A classic example of a quad. Not overly complex, but with plenty of depth. Standard-setting.
