A - Pours the same color as the six and the eight. Same big head, same color, leaves good lacing.

S - Hay, chocolate malt.

T - Chocolate malt, hay, slight fruit.

M - Medium carbonation with a medium body.

O - Overall, the 6, 8, and 12 all virtually taste the same. I don't see the hype in these beers. Rochefort 10 destroys this on any given day.

A: Dark, murky brown color. Medium, belgian head, that gets quite large, but dissipates quickly.

S: Nutty, juicy, sweet figs. Faint coco notes as well. Caramelized bananas. Subtle tobacco notes. Alcohol is definitely perceived.

T: Fairly bright, well carbonated front. Thick malty sweet body. A lot of delicious dark fruit notes. Dark caramel.

M: Bright front, but thick fully body cuts in.

O: Quite good. A lot of delicious, complex notes going on. Definitely getting better and more complex as it warms up.

A - Poured into a tall chalice, a dark mahogany brown. Small but sturdy head, dissipates fairly quickly but maintains nice lacing.

S - Smells a bit musty and boozey. Dark fruit and sweet bread.

T - Tastes sweet, mildly tanic like a fine red. Candy, citrus, and plum. No one aspect stands out, but the sum is greater than the parts.

O - A fine brew, goes down smooth and seems to reveal a different aspect with every sip. Would be in the running for my last beer ever if I had to choose.

Never reviewed this, huh... that's strange, had it quite a few times over the years.
Must have been too busy enjoying it.

12oz. bottle, BBD: "02 02 17" printed on the back label.
Served in a small snifter glass.

Huge billowing head of tan foam forms after a slow pour, first leaving behind a thin collar, then delicate arcs of lace that slowly settle back into the beer. Swirling the glass quickly rekindles the head for a few moments, but it quickly dissipates again.

Fruity and spicy aromas of fig, plum, sultana, some clove.

Flavors are similar, distinct plum and clove notes, earthy hop with some caramel and raisin in the middle. Finishes dry and fairly smooth and creamy despite the high abv, though its certainly warming. Not overly sweet, moderate carbonation. A benchmark of the style, allowing the trappist yeast to be showcased, not hiding behind a ton of candi sugar and booze like so many other Quads.

A - Pours out a dark brown color with a thick tan head. The head doesn't look like it wants to go anytime soon!

S - The smell of this beer is unbelievable. Definitely getting lots of clovey smells, but also some nice floral aromas and some resinous and perfumy smells almost like frankinscense. I an detecting some nice vanilla scents and of course the characteristic "dark ripe fruits" everybody describes when reviewing Quads, in spades.

T - I waited to take it all in before sipping this fine brew and it doesn't disappoint. Lots of dark, sweet, vinous fruits linger on the palate before being washed away by leafy hop goodness. It is a little sweet but yet the alcohol in very well hidden. Definitely has nice clovey and spicey flavors but nothing is out of check and it all marries perfectly.

M - Mouthfeel is creamy and smooth!

O - Overall I'm probably not saying anything that hasn't already been said. After letting this beer warm up it becomes even more amazing. The bottle describes it as a "brown ale", kind of in the same way someone might call a Ferrari a "red car". There is so much going on yet it never overtaxes the palate. I would say this beer at 10% abv is dangerously drinkable. I would say that is highly complex with big clove, vanilla, spice, and leafy hops AND it is just a darn great beer to sit and enjoy and not over think! Will buy again, and again.

750mL bottle from Total Wine (Kennesaw, GA). 10.49. Served in a Dogfish Head snifter.

Pours deep mahogany with a foamy three fingers of head that leaves big sheets of pretty lace.

Smells of cherry pits, brown sugar, caramel and a hint of yeast.

Tastes of sour cherries, caramel, toffee, grapes, yeast, brown sugar, nuts and a healthy dose of booze with a good balancing bitterness. Lots of great stuff happening with no one flavor getting out of control.

Nice creamy medium full body with light carbonation. Long dry, almost wine-like aftertaste.

A fantastic quad. Well balanced with an abundance a great flavors. I'll definately be enjoying this again in the future.
