Bottle dated 10.06.15, I assume just over 2 years old.

A: Pours a deep red/brown with a big fluffy light brown head. Swear the head even has a little red in it. Fades slowly with moderate lacework left behind.

S: Quite fruity. Lots of raisin, fig, prune, grape and cherry. Get some caramel and some earthtones as well. Some fruity and alcohol esters in there too, kind of sharp.

T: Fruity up front with some raisin, fig and grape - even a little banana. Quickly turns into a malty surprise. Loads of brown sugar and caramel and even a bit of toffee in the middle. Some nice bitter cocoa and then the earthiness and spices (mainly clove) kick in towards the finish. Finishes a touch dry with some fruity esters floating around.

M: Pretty heavy, smooth and slick.

O: One of the better quads out there. Nice and mellow with lots of fruit and malty sweetness (but no where near overly sweet or cloying). In fact, it's on the drier side. Well balanced flavors with substantial complexity. It's a distant runner-up to Westy 12 but then again, who can really compete?

Pours a medium brown with decent head. Smell is of very ripe fruits of the apple & pear variety as well as figs, plums, etc. Taste follws with an extra bump of brown sugar and alcohol. It's really sweet, which I think limits its drinkability, but the flavor is good and the alcohol is very warming - so it calls for a slow sip approach anyhow. I would definitely rank this among the best abbey ales I've had. Really good, even if they are not among my favorite styles.

look: 4.5 | smell: 4.5 | taste: 4.5 | feel: 3.5 | overall: 4.5

Appearance: Deep rich brown with some dark red highlights. Hazed. Head is creamy and a pale tan. Drops to a solid cap and leaves some hints of lacing.

Smell: Every dark fruit in the book. Big on raisins and figs, with some plum and dark cherry pulling up the back. Nice sharp bite of alcohol. Incredibly bready. Candi sugar, caramelized malts. Seriously caramelized. Some nice underlying spiciness from the yeast. Clove and even some ripe banana in the back. Nice complexity. A little dry earthy/herbal. Sweet and spicy.

Taste: Chewy malts. Bready, caramel, caramelized sweetness. Heat from the alcohol on the back grows as it warms. Yeasty, but in good measure. Nice levels of clove and banana. Fruit flavors take a back seat. Some nice plum and fig layered over fresh bing cherry. Chocolate/leather hide in the back. Has that distinct Belgian phenol thing going on, in proper measure. Restrained phenol/ester aggression. Clove builds as the beer warms. Solid dosing of candi sugar.

Mouthfeel: Medium body works with a slightly higher than expected carbonation. Dry from the alcohol, but a bit prickly as well. Lingering yeast.

Overall: Cross this line and you've achieved greatness.

I'm not huge on Belgian beers, but St. Bernardus knows how to do it well. Nice depth and complexity. Big without being too aggressive. Warms and ages like a champ. Truly a top example of the style.

Consumed 9/13/12

Appearance: Murky, cloudy brown - large, fluffy, creamy off-white head, sticks around indefinitely - leaves some rocky lacing

Smell: Spicy Belgian yeast and rich malts - clove, bananas, and some straight-up yeasty funk - candi sugar, caramel, cooked malts, and tons of dark fruits - figs, plums, dates, pretty much the range of dark fruits - molasses-like sweetness, but with a lot of dryness, phenols become more apparent as it warms up

Taste: Exactly what one would expect in the style - chewy, cooked malts - like a dark, spiced bread - Belgian yeast is prominent, but perhaps not as intense as some others of the style - lots of spicy yeast, clove, banana esters - lots of dark fruits, like figs, dates, raisins - some tartness, phenols, and some hints of chocolate - some alcohol

Mouthfeel: On the light side of full due to the carbonation - highly carbonated, works well, smooth, a nice sipper

Overall: Pretty much my standard for the style

I've had this at least 4 times in the past, and I don't quite understand why I never gave it a full review. For me, this sets the bar for quads. It's very tasty, and it's easy to get. No, it's got as good as Westy 12, but it's really one of the best.
