Consumed 9/13/12

Appearance: Murky, cloudy brown - large, fluffy, creamy off-white head, sticks around indefinitely - leaves some rocky lacing

Smell: Spicy Belgian yeast and rich malts - clove, bananas, and some straight-up yeasty funk - candi sugar, caramel, cooked malts, and tons of dark fruits - figs, plums, dates, pretty much the range of dark fruits - molasses-like sweetness, but with a lot of dryness, phenols become more apparent as it warms up

Taste: Exactly what one would expect in the style - chewy, cooked malts - like a dark, spiced bread - Belgian yeast is prominent, but perhaps not as intense as some others of the style - lots of spicy yeast, clove, banana esters - lots of dark fruits, like figs, dates, raisins - some tartness, phenols, and some hints of chocolate - some alcohol

Mouthfeel: On the light side of full due to the carbonation - highly carbonated, works well, smooth, a nice sipper

Overall: Pretty much my standard for the style

I've had this at least 4 times in the past, and I don't quite understand why I never gave it a full review. For me, this sets the bar for quads. It's very tasty, and it's easy to get. No, it's got as good as Westy 12, but it's really one of the best.

A - rust brown color with a thin foam that leaves rings of lacing. Small bubbles of carbonation.

S - Scent of cloves and cinnamon. Fresh fruit smell and some molasses.

T - Flavors are of fresh fruit and a bready flavor of cinnamon rolls. Spicy notes of clove are present. Finish has a warm boozy feel that is slightly acidic.

M - Great drinking belgian quad that is so well balanced that the flavors aren't overbearing. A joy to drink.

O - I am a big fan of Rochefort 10, but this is an equally great version of the style.

I tried this beer when I was in Belgium. The head was nice and foamy. The smell of malt was rich and with a chocolate. Mouth feel coated my mouth and lingered for a moment. Finished superb. With the 10% it does the job quite quickly. All in all, one damn good smooth beer.

Served in a branded goblet. Poured a deep brown in colour. Stained foamy head, leaving no lacing. Smells sweet and malty, with a hint of alcohol too, thanks to the 10%. Tastes light on the tongue, filling and developing in the back of the mouth. Malt presence becomes really prevalent on the finish. Classic trappist.

New years here we come. Forget the champagne, get this. Smooth from beginning to end. Trappist rules. Want to become a monk. Cant wait to have another. Can slip it slow or have many. Only draw back is 10%. To some that was not a negative. Moving to Belgium.
