Poured into tulip glass with an enjoy by date of 9/27/16

A: This pours a murky brown mahogany like color with a great three fingers size of fluffy off white head. There are tight, small bubbles at the bottom of the head and larger bubbles in the middle and a wonderful rocky top surface. This head dissipates rather slowly and leaves gorgeous lacing on the glass.

S: Just how I expect a Quad to smell. Bready and biscuit like with yeast characteristics. There is wonderful sweet caramel and toffee aromas. I also pick out dark fruit like plum and raisin. I am having a hard time trying to get any alcohol on the nose and thats a surprise at 10% ABV. This smells outstanding and very inviting...can't wait to taste it. The smell just invites a sip.

T: Holy hell this is huge in flavor and complexity. I Get an initial sweetness and yeasty bready flavor followed by some caramel malt. Mid sip I pick up on the dark fruits of figs, raisins and plums. On the back end I sense a slight bitterness that is appealing and helps even out the sweetness. Fantastic tasting Quad!

M: Very, very smooth! This was the first thing that jumped out at me. I can't say just how smooth this is, unbelievably smooth! Little carbonation to speak of with medium mouthfeel. I do feel this coat my throat temporarily but it doesn't stick around too long. Great mouthfeel!

O: Just an overall outstanding Quad. Perfect in every aspect for this style and the drink ability is off the charts for a big beer like this! I love this beer!

A - poured a dark brown with a 2 finger head that dissipated slowly. The lacing was perfect for a quad.

S - The perfect smelling beer. Dark fruits, alcohol, bready yeast dominate. Hints of caramel ride underneath.

T - A very very smooth beer. The taste goes right in line with the smell, sweet coupled with an alcohol that longs to be embraced.

M - Not overly carbonated with a nice smooth feel.

O - a fantastic beer with everything you could ever ask for. I want a bottle to be placed in my casket.

This quad poured a 3 inch head that was thick and frothy. The color of the brew is dark brown with a thick cloudiness. The head eventually died down but leaves an average lacing against the glass.

The smell is very nice. Very rich and bold with a great combination of malty sweetness and grain.

The taste of the ale is outstanding, hard to beat for a Belgian quad. Very malty, very sweet, very bold and a hint of fruit that escapes my palette - maybe figs, something else? Cannot put my finger on it. Does not matter; the taste is bold and easy to drink without the burn or musk of alcohol at the end, which is impressive for a 10% brew.

Mouthfeel is pleasant. Smooth, heavy and no carbonation.

Overall this beer is ridiculously good. Great smell, unique flavor, nice mouthfeel and at 10% it gets you lit quickly. I drank it cold but warm I think it would be just as good. Try it...today...

From notes on 03/25/12:
Best by: 03/22/2016; Poured in a snifter.

A - Over an inch of off-white carbonated head with decent retention; Very dark mahogany brown in color with a slight maroon hue; Though barely noticeable, there's lots of floating sediment within the glass; Very minimal lacing left behind

S - A light aroma overall, but well crafted with notes of tart dark fruits, grapes, sugar, caramel, cherries, clove, and light toast; Very faint alcohol presence here

T - Very enjoyable taste with lots of tart, crisp grapes up front accompanied by figs and dark rum-like fruits with a bit of buttered toast and caramel; There is some alcohol and warmth present, but they mesh with the other flavors very well; Peppery and lightly spicy flavors come after the initial wave of tart grapes

M - Carbonation is very zesty, providing a good bit of sting on the tongue in combination with the alcohol warmth; Goes down smooth, but the stinging is relentless on the tongue - a bit over-the-top at first, but I really start to enjoy it as the beer warms; Between medium and full bodied

O - I truly enjoyed having this Trappist ale as much as the monk depicted on the bottle. Along with Rochefort 10 and Westvleteren 12 (though I haven't yet had it), this brew easily fits in the top tier of Quads and does not disappoint at all with it's superb flavor and addictive mouthfeel. Sometimes, it's nice to just relax and sip on a complex beer to take the taste buds for an awesome ride. St. Bernardus Abt 12 is an excellent choice for such an occasion.
