Poured from the 11.2 oz. bottle into a snifter.
The Pater pours opaque, rich brown into the glass forming a thick off-white head that eventually dissipates into an 1/8 inch thick film over the beer. Beautiful whisps of lacing spread down the sides of the glass.
The beer smells of Belgian yeast followed by candy-sugar malt. Hints of dried fruit and banana coexist with the strong malt backbone.
St. Bernadus creates a beer that immediately opens with a hop presence, slightly bitter and a little acidic. This is followed by notes of maple sugar, light spice, and burned grains with hints of Belgian yeast and an ever-so-slight hint of bread. The actual finish mostly consists of the sugary malt layered over Belgian yeast.
The mouthfeel for this beer is a bit thinner than expected, even with the copious amounts of carbonation. The finish does last long after the sip is gone, however.
With the low ABV and the lighter-than-expected mouthfeel, this Belgian strong dark is actually very easy to drink. I like the Pater 6 more than I was expecting to, especially as it warms. St. Bernardus did a wonderful job with this offering, and I look forward to the 12.

Pater 6 pours a cloudy amber color with no head. There is a very dry and very sweet aroma, with some dry grape almost wine like notes. The taste is dry and very very sweet, with some grape notes, and has a wine like flavor. The flavors are good and strong, but very flat feel. Overall its nice, but very very sweet, and too sweet for me.

Bottle dated 14 03 16 at 50 degrees into snifter
Aroma of fresh bread which gives away to a heavy malt odor
Head average (4.5 cm), off white, frothy, slowly diminishing to 4 mm ring with center island
Lacing poor – a few irregular islands which slide back down to the ring.
Body dark brown, hazy from yeast from the pour
Flavor starts with heavy brown sugar and over-ripe date sweetness which slowly fades to an unpleasant sourness
Palate full, syrupy, lively carbonation
This tasted pretty decadent until the terminal sourness rolled in. After that, it was a literal bad taste in the mouth.
