A: Poured with a large, off-white head.... slowly diminished down to about 1/2-finger. Fair lacing through drinking. Body is a muddy brown and very cloudy, with no particles noticeable.

S: Light yeast, cloves, and fruity sweetness (bananas?).

T: Very nice flavor... the yeast and breadiness is noticeable first, then the fruity sweetness of bananas comes through. Finishes with a very light bitterness, barely noticeable at all. Average duration for the flavor.

M: Body is light-to-medium bodied with a very creamy texture. Lots of fizzy carbonation that almost burns the tongue.

D: Extremely drinkable, a very consistent dubbel that I really enjoyed. The carbonation was almost offensive, but didn't quite get there. Otherwise, very good.

Poured into a chalice.

Pours a slight ruby brown, has an off white head. The head settles to a lace top. Some minimal lacing.

Smells of yeasts, dark fruit. A sweet smell.

The brew tastes very smooth a somewhat peppery mouth feel initially. But a smooth finish. This brew tastes of dark fruits, yeasts. A much better balanced dubbel then the Prior 8.

This is a nice Dubbel, very tasty. Good balance and taste. Just subtle enough alcohol tastes. This type of brew is a bit strong to session, but it makes a good case to try. Good brew.

A: A crimson color with shades of orange and maroon. The head is incredibly huge and frothy, depositing a solid sheet of lace all the way around the glass. A solid, thick cap of sudsy froth remains atop the brew.

S: Nose is a bit more raw than the Prior 8. It's still got a dried fig component, some spices, and such, but there's a distinctive raw herbal/earthy/funky aromatic that's interesting, but diminishes with warming. Cocoa and a soft nuttiness are also present.

T&M: Simply an excellent beer. It's like a session-dubbel. Filled with a complex array of flavors, yet not bold or boozy enough to inhibit quaffability. A smattering of light cocoa, toasted nuttiness, fig, apple, and candi sugar all contribute wonderfully to the flavor profile. The herbal/funky note from the aroma balances out the aforementioned sweeter flavors on the finish, which makes the drinkability out of this world. Body is medium with a lush, smooth, and creamy mouthfeel that's simply perfect.

D: This drinks like a low-ABV brown ale, with infinitely more complexity and flavor. A slam-dunk from St. Bernardus--this would be my everyday, go-to beer if I were living in Belgium.

Found this for $3.39 a bottle at the new Bottle Shop in Gastonia. Big fan of the brewery so why not try this one? Could tell from the appearance this was a dubbel, but it took a while to warm up til I got the nice fruit notes, belgian yeast, and medium body. Definitely a good example, but nothing to knock my socks off.

Tasted back-to-back with its bigger brother, Prior 8.

Classic dubbel pour with a huge creamy head sat atop an oaken body with ruby highlights, retention and lacing are great. Strong yeasty nose, with very prominent spicing, dark fruit and over-ripe bananas. Decadent and lush, this carries through to the taste, where the prominent flavours are supplied by the dark fruit (raisins and prunes), but with a large supporting cast, and an excellent second fiddle in spicy yeast. Sweetness throughout, but not annoyingly so. Exquisite and balanced... just short of perfection. Medium body, with a strong, but pillowy, carbonation.

Excellently crafted, as you would expect from St Bernardus, this easily vaults into my favourite beers.

Poured from a 330 ml bottle purchased for $3.99 at Lena's in Painesville last week into my Trappistes Rochefort goblet (the first beer that I poured into this great looking, gold lined glass). Possible "best by" date of "15 02 10" written on the back label.

A Great creamy one inch head over a classic looking Belgian deep mohagany body. Lacing is obvious as I sip this one. 4.5

S Ahhh...that great Belgian malt with almost no hops. Also smell the Belgian yeast as well. 4.0

T Well, classic malt and yeast taste that is has an element of a "woodsy" type taste. It is not as complex as other St. Bernardus (like Abt 12) beers. This is a nice example of a classic Belgian taste. 4.0

M Some smoothness but frankly lighter than I expected. The lightness makes it more drinkable, though. 3.5

D Very good with managable ABV and basic taste. It would likely cost a lot to drink this as a session beer, I am afraid.

33cl bottle poured into a Stella glass.

To love: The aroma is strong and full of sweet fruit esters like raisin and banana. Overall a very solid beer on all points.

To like: Big and bold look, dark golden brown and very opaque. Nice light tan blanket on top. Flavor is sweet and fruity with raisin, banana, and bubblegum notes. Blends to a coffee-type bitterness as it fades, with that aftertaste more prominent as the beer warms.

To improve: Seems like the carbonation is excessive and the harshness of it prevents the flavor from coming through. The carbonation did soften quite a bit as the beer sat, making it more appreciable.

#4 of my St. Bernardus six pack sampler. Pours a reddish brown color into my 25cl Chimay goblet, head is about one finger and disappears quite fast, almost before I started drinking the beer, a good blanket after the fizzy head. Little-no lacing is left on the glass after the beer is done. Rest of the review is almost a clone of the Prior 8 without alcohol presence. Tastes and smells of malts, light fruits (some apples), belgian yeast and spices, raisins and no alcohol, nice. The mouthfeel is a bit light, almost medium, with good carb and a smooth way about it. Only gripe here is this beer has the least after taste I have ever experienced. Drinkable as any Belgian, probably the most drinkable Belgian I have had, it is like a Dubbel-Lite, very refreshing, will have again.

Poured into an Achel glass

A: Brown/amber color. Small cream color head that doesn't last long. Some lacing throughout the drink.

S: Smell of yeast, malts, raisins and banana.

T: Malts. It's a bit bitter which is not found in the Bernardus 8 and 12. Raisins and some red fruits.

M: Medium/high carbonation. Soft with a very pleasant aftertaste. A bit dry.

D: I like the diversity form the other Bernardus beers. A pleasant drink combining sweet fruits, malts and bitterness in an elegant way. Will surely buy this again.

Single from Wilbur's in Ft. Collins, around $6.

A: Dull brown in color with a cream colored head, light bubbles, fairly cloudy, really a dull-ish looking beer. Not really striking in any way. Some reddish accents when held to the light. Okay looking.

S: Smells like a little bit of a hybrid between a dubbel and a German Pils, light fruitiness mixed with pale malts, and a bit of a hop profile. Once again pretty meh...

T: Quite fruity, has an almost candy like sweetness with a coffee bitterness towards the end, a slight bit of a cinnamon, tastes almost doughy, a lot better than the smell. Has almost a grape like flavor, or even so far as a grape soda. Really a sweet beer. Hints of raisins. Interesting, but just doesn't do it for me like other St. Bernardus beers.

M: Thin, slightly boozey, very carbonated, hits all the appropriate dubbel notes for the mouth.

D: I don't really like this one, just too sweet, doesn't really stack up to the Prior 8. I wouldn't say it is a chore to drink this, because it is pleasant, but definitely not one of the first Dubbel's I would suggest or look for. Seems to come up lacking in the otherwise great lineup of beers from St. Bernardus.

A - This beer poured a orange brown color that produced an off-white fluffy head that had great retention and laced the side of the glass very nicely

S - The aromas produced by this beer had a nutty, malty quality with a good bit of dark fruits

T - The taste of this beer had a great depth of taste to it, a malty sweetness that was complemented by a little bit of nuttiness, dark fruits and spice, and a bit of yeast

M - The mouthfeel of this beer had a medium body with a light amount of carbonation

D - This beer had a good flavor profile, not as good as the Prior 8 or the Abt 12, but still a good beer

Served in a St. Bernardus chalice.

Pours a deep ruby-brown with almost no head.

Smells of dried fruit and yeast dominate. Any alcohol is muted if not imperceptible in the nose.

Tastes of belgian yeasts, red grapes and caramel, but not too sweet. It's actually pretty dry all things considered.

Surprisingly light-bodied for a dubbel. There's little if any malty stickiness. The silky carbonation makes this a treat to sip.

This is a very easy beer to drink. I only planned to order one, but I couldn't help but get another because drinking it was such an effortless experience.

Maybe it's because I'm reviewing this in the middle of summer, but this has become my favorite offering from St. Bernardus. The low alcohol level for the style makes this an excellent dubbel to drink in hot weather.

Appearance - Deep red, 1 finger of head with good retention.

Smell - Lots of yeast, only a little malt is detectable.

Taste - Not like any Dubbel I've had before. Unusually light for a Belgian ale, very yeasty with subtle malts.

Mouthfeel - Medium bodied, very lively.

Drinkability - Not great, due to the yeasty character.

Overall - This could only be a Belgian ale. However, this is really lacking in flavour to back up the high yeast content. I'm hoping the Prior 8 has more flavour.

Poured from an 11.2 oz bottle into my St. Bernardus goblet.

Appearance: Pours a hazy brown, maybe a little bit of red. One finger of white head that lingered for awhile. Heavy lacing.

Smell: Mild bready malts and some fruit. The typical smell found in most Belgian beers. It blends together very nicely - smells smooth, if that makes sense.

Taste: Hmm. Not exactly what I was expecting. The bready malt is present in the finish, but the initial taste is hard to place. Almost a seltzer kind of note, with the high carbonation - it's not as sweet as I would have expected, and could stand to be a little sweeter. The fruity notes are there, but the sweetness isn't. It's mildly unpleasant, but the bready malt helps smooth things out to some extent. The 'unsweet' aftertaste stays for awhile, too.

Mouthfeel: Highly carbonated and creamy, as to be expected.

Drinkability: So far, my least favorite of the St. Bernardus offerings. It's not a bad beer, but I prefer their other dubbel, the Prior 8, much more.

Poured from the 11.2oz bottle into a Duvel glass. Pours a lovely cloudy brown with a thick white foam.

Smell is fruity, malty.

Taste is complex and thick. Very chewy. There's a fruity background w/ hints of spices and peppers in the background. Well carbonated in the mouth.

A complex, tasty brew - but very drinkable. The flavor holds nicely, and this never devolves into one of those 'hard to drink' speciality beers. This one's a repeat go-to.

Pours a thick head of creamy, very pale beige head. Body is a hazy tawny brown. Left lots of white lace on its way down.

Smell - 3.5
Chocolate sponge cake, mild but sweet fruitiness and a little spice.

Taste - 4.0
Pleasant, but too yeasty for my liking. Flavours of yeasty fruitiness, toasty malt, warming alcohol and a little cocoa. Actually tastes better with the dregs added, they give a nice, milk chocolate flavour.

Mouthfeel - 4.0
Even though it is a Belgian, I think the carbonation is a bit excessive and aggressive, feels slightly coarse in the mouth, although this improves with warmth. Light to moderate body.

Drinkability - 4.0
Approachable ABV, plenty of flavour, but there are more memorable Belgians.

Believe it or not, but Pater 6 reminds me a lot of Coopers Sparkling Ale. It has a similar tasty complexity, and a similar tangy yeastiness that I do not like. A good beer, but not a great Belgian.

Been waiting to try this for a while.

A - Gorgeous foamy head. Mahogany color with a wonderful dense head.

S - Green apples, cloves, caramel, and pepper

T - Wow. Very clean with pilsner meets brown ale. Bits of green apple and baked bread with a touch of the caramel. the spice comes on the finish almost like a saison. A really complex beer.

M - Great carbonation and really smooth. the spicy lingers in a nice way. Very crisp.

D - This was a hard to find beer, but really worth the trouble. Complex and really interesting.

Small 330ml bottle. Best by 08 06 10.

Pours into a chalice a dark redish brown color with characteristic great head that I expect on Belgian beers. Lots of lacing left behind on the glass as it slowly settles.

Aroma is a little funky sour but really pleasant with candied fruit and yeast.

Flavor has similar qualities but with a little more roasty dark malt than expected. It still has the dark fruits like cherries and plums but with some added sour flavor, maybe green apple or premature pear.

Nice smooth mouthfeel with lower carbonation than expected. Very drinkable other than the high price. $6 for a small bottle is pretty steep.

Pours a murky pecan brown with a moussy and soft offwhite head. Lacing is pretty good

The aroma is of toasted brown sugar, burnt toast, yeast spices come through as well with almost no hop aroma

This is a dubbel with the sweetness turned down, and I'm glad for it. But what it lacks is the overall burnt character that is so great about thier quad.

The flavour is sweet pecan pie, toasted brown bread, buttery pie crust, and a sticky dark malt. The belgian yeast contributes spices and depth.

Mouthfeel: Pretty thin bodied, and fairly carbonated

This is not an overly powerful or complex dubbel, but highly drinkable

As soon as I cracked the lid on this one, beer exploded out at me, and I didn't shake it at all. It's been a while since I've had bottle conditioned ale.

Appearance wise Pater 6 creates a lot of light tan head, even with just a gentle pour. The body is murky brown.

This beer gives off a lot of copper/metallic types of aroma. There is a sweet malty backbone, which is cola in character.

The taste is a bit on the sweeter side with hints of plum/prune.

The feel is a little oily and slick, but still refreshing. There is a slight warm feel to this brew too. Overall Pater 6 is a pretty good dubbel.

Pours a fairly clear medium brown color with a fluffy light beige head that fades slowly and leaves a nice three-dimensional wall of lace on the glass.

Big nose, filled with Charleston Chew chocolaty filling and some dark plum pudding. Maybe a few hints of black licorice and miniature marshmallows floating in a cup of hot cocoa. Nice...very nice.

Has a light, airy feel when drinking it, very creamily meringue like. Chocolaty flavor with some dark berry juices and dates or figs with an almond like nutty essence. I dont get a whole bunch of rich, yeasty esters but it still maintains a nice complex profile. This is a great beer.

Poured into my St Bernardus chalice.

A: Deep copper, with a fair amount of haze, plus hyperactive carbonation. Rocky and voluminous eggshell head has great retention and leaves heavy lace.

S: Quite spicy. Cinnamon, pepper and clove flavors really stood out. Dark fruits add a subtle vinous quality.

T: Fairly mellow given the style, but still tasty. The spicy theme continues. Prunes and figs start things out, but are quickly replaced by a combination of spices. Cinnamon, clove, allspice and even a touch of anise give this beer a ton of character, without being overpowering. Yeast is in the back with a mild sourdough quality. Finishes with a lingering spiciness.

M: Medium body has the intense carbonation I've come to expect from this style.

D: This is pretty subtle for a Dubbel, but a great beer nonetheless. If there was an entry for Belgian Single, this beer would fit the bill. The relatively low ABV makes Pater 6 go down very easily. I'm really glad I picked it up.

Pater 6 was my second stop on my four part journey through St Bernardus beers. Prior 8 and Abt 12 are up next.

Slightly cloudy nutty brown color with a creamy white head. Light on the nose with a floral sweetness and maybe just a hint of malt. Extremely carbonated in the mouth. Nothing overpowering in this beer, it has a medium body. Not too flavorful, subtle hints of caramel with bitterness. Finishes clean.

A: Thick delicious looking head that laces the glass perfectly. This is what it is supposed to look like. Nutty brown with mild haze.
S: Maltier than I remember. Light brown sugar and maple finish off the nose.
T/M: Medium to high carbonation with moderate body gives a nice creamy texture. Malty up front followed by the sweets in the nose, again, all subdues. A touch of warming alcohol in the throat and slight sourness in the aftertaste. Still a great beer.

Bottle had 30-09-11 on the back.

Aroma - Sweet malts with some citrusy hop aroma too.

Appearance - Red with plenty of carbonation. Poured produced a nice off-white head.

Taste - Sweet with a little spiceness, dark fruits are in there too. A well rounded beer.

Mouthfeel - Medium bodies with plenty of carbonation.

Drinkability - Highly so.

Aroma - Dark fruits ans Belgian spice and yeast

Appearance - Dark rd with a creamy tan foams. Tons of carbonation on the pour. Tons of lacing later.

Taste - Watery with a good level of spice. Dark sweet fruits. Complex but not a lot of words come to mind to describe it. Along with the spice there is a hint of alcohol and a flavor similar to alcohol that doesn't seem to quite fit.

Notes - Thin mouthfeel but good carbonation. A very good beer, kind of a toned down Abt 12.

750ml bottle courtesy of brewandbbq. Can't believe I haven't reviewed this one yet.

Pours a fogged in orange hued brown with a sizeable creme head. Nose is lots of sugar and lots of malts as well. Flavor is malty and earthy sweet again with a bitter hop edge on the side. Spices are clearly evident. Overall tone is earthy and robust. Feel reminds me a bit of Westy 12, though much harsher on the carbonation. Bites too much IMO. Overall a nice dubbel. Classy and classic. If you haven't had all of the St. Bernardus line yet, you might as well get to it.
