Cloudy gold with white, dense head that dwindles to a thin layer and laces well. Light barley with citrus zest and lots of spices on top: allspice and coriander come to mind. Malt backbone is solid yet light. Trending towards wheat slightly, the Belgian pilsner shines through the big lemon tang flavor. Very dry, the finish also brings the spices mentioned above. Balanced feel somehow pulls off being creamy and then effervescent in the same sip.
Light and refreshing, all the flavors shine without stepping on each other's toes. The spice of the yeast is showcased especially well, reminding me of what most Wits should scale back to. I'm especially impressed with how they've handled the Belgian malt, as it's a delicate animal that tends to leave a bad taste in my mouth of not used properly. This is definitely one of the best Tripels out there.
