Oude Gueuze Tilquin à l’Ancienne (6.0% alc/vol) is a spontaneous fermentation beer, produced from the blending of 1, 2 and 3 years old lambics. It is unfiltered and unpasteurized, and refermented in the bottle for at least 6 months. The lambics used were fermented and oak aged in our installations. These lambics are coming from worts brewed by Boon, Lindemans, Girardin and Cantillon breweries.

Poured from 750ml into Chimay goblet.

L - Hazy, medium amber-gold with an inch of lacy white foam.

S- Tart/sour, wet straw, and yeasty funk.

T - Sour lime, bitter salad greens, spicy yeast. No malt or hop flavors to speak of.

F - Crisp, fizzy carbonation, not overly astringent.

A well balanced lambic as none of the flavor notes are overpowering. Each takes its turn on your palate and you're left with a refreshing beverage.

On tap:
Pour is hazy yellow, a bit of "whiteness" due to the haze. Head is fluffy at edges, some patterns forming on the surface from where the head is being sustained from below. Nose is pink grapefruit tartness level (some sour milk can be noted) on top of farmhouse (hay/earthy/lightly funky). Nothing outrageous or exceptional, just spot on in my mind.

Taste follows the nose,with a bit more white grapefruit sourness (means something to me). The lingering sour milk that I can enjoy never comes, as a quite wooden taste is what wipes the sour bite away, fading the sour from sour cherry to Granny Smith. The fading is slower in some sips than others, I think it has to do with time between sips, somehow. Feel is light and carbonated, and mildly puckering up front.

A very solid representation of what I understand the style to be. This pour was a tad expensive, so have to consider that for future purchases, but this should stay on my radar, since I see bottles at my local shops.
