The Gueuze Tilquin - draught version (4.8% alc/vol) is a spontaneous fermented beer, produced by blending a low alcohol lambic (called Meerts) and 1 and 2 years old lambics, all fermented and aged in oak barrels. It is unfiltered and unpasteurized, and it is refermented in the keg. The lambics used were fermented and oak aged in our installations. These lambics are coming from worts brewed by Boon, Lindemans, Girardin and Cantillon breweries.

A – Pours a deep bright yellowy orange, head is is bright white, sticky, tall, leaves behind spotty and thick lacing.

S – Smells tart, funky, barnyard, light oak, bitter, salty, vinegar, hay, grassy, peppery.

T – Tart and bright, sour, complex notes of oak, pepper, barnyard, hay, soil, funk, vinegar, apple, lemon, apple, citrus, spice.

M – Effervescent, champagne like, astringent and drying, absolutely wonderful.

O – Fantastic Gueuze, delighted to have tried it, so complex, tart and balanced. Excellent. (549 characters)

So good. Big raspberry throughout. Some funk, hay, barnyardy flavors. Finishes dry and slightly sour. Nothing too overwhelming. Love this. (178 characters)

I had this at Moeder Lambic served chilled in the appropriate glassware.

The color is deep golden with amber peachy hues with thick haze and fast rising bubbles visible with thick white head with fine bead and speckles of lace stick. The aroma has a strong funkiness with floral accents and light lemon/herbal fragrance with mild hint of wood and slight lactic scent with tangy juicy odor. The feel is tangy, dry and highly carbonated with moderate sour and light lactic acidity in the middle wtih dry and woody texture in the finish with subtle sour texture lingering after the swallow.

The flavor is pretty intense with a dry tart tangy and puckering sour yet refined flavor with wood and lemony lactic element yet malt is slightly balancing as it evolves with a mild sweet/fruity combination of wild yeast in the flavor. The taste has a subtle earthy funk in the background adding to the complexity of flavor with a mineral dryess perhaps from the high carbonation as it finishes tart. The flavor is great and so is the drinkability- I never had the bottle, but now that I have had the draft version I would like to try it. This is a wondeful Gueuze with subtle and drinkable qualities in every way. (1,207 characters)

Lots of tangy sour vinegar qualities in this with some honey and Apple cider on the nose. The flavor is more white wine, champagne, Apple cider vinegar, straw or barnyard grain, Apple and pear. The feel is very light, with what seems to be no carbonation, much like a cider. (274 characters)

$3.50 on draft @ Duckworth's Park Rd - Charlotte NC.

Looks the part - straw colored brew with a lot more carbonation than I expected, massive cloudy head and a tad of oily lacing lingering on the now empty glass. The nose is very floral, charred wood and lemon are imminently present. The taste is surprising, not as tart as I'd hoped and very dry, lot's of wood there. Interesting how much pepper is present. Very nice beer that fell short of my expectations. But I'll definitely give it another shot down the road. (517 characters)

The smell is very intriguing. Like flowers that have been marinading in the summer sun for a long time. Lemony funk, musky wood, mystery flowers all really really well combined. Flavor is dustily dry, lemony sour, apple, floral, woody, musky. Harmoniously wacky. Like it a lot. (277 characters)

Had this on tap twice at Federal Taphouse, Harrisburg PA. Was from different kegs, and it showed. The first time, this Gueuze was absolutely amazing, an excellent blend of fruity hints, without being overwhelming fruity, a little tartness, picked up hints of the lambic flavors and body. It was absolutely amazing, especially since it was $12 a glass.

A month or two later, had the same Gueuze from the same bar, new keg... it was so bland, lacked all the diverse flavors and notes I had experienced the first time. The color was also noticeably lighter, was not very enjoyable.

Bottom line, either the bar didn't handle the keg properly, or this varies significantly in quality over batches. I know to always expect variations but this was night and day. (759 characters)

A - Pours dark orange with a decent white head that faded thin

S - Funky, light fruitiness, apple and sourness.

T - Initial musty funk and fruitiness followed by acidic sourness levels. Hints of grass, green apples. Dry finish with lingering sourness and fruit.

M - Medium bodied dry with moderate carbonation.

O - Pricey but worth it on occasion. Balance of sour, funk and fruit notes made for a very well done gueuze.

I have no idea how my original rating on this beer was only 3.5. For me this is the gold standard for gueuze. I love Drie, Hanssens, Girardin and Cantillon...but Tilquin is my favorite.

The balance of funk and oak is perfect. It reminds me of aged champagne and I often drink and serve it as a stand in. It is nearly perfect with food. A beer above description, so I won't try.

Recently stumbled across my notes from The Festival 2012. Lets do this!

A - Poured a nice hazy dark straw hue with a big fluffy two finger head that fades to leave a thin blanket.

S - Nice lemon, citrus notes, subtle funk.

T - Taste is very smooth, balance, tart lemons. Super nice and dry on the finish. Complex.

M - Mouthfeel is solid, very solid. Tart, dry, puckering, incredibly sessionable.

O - Overall a very, very good gueuze. Definitely worth the pour if available on draft. (487 characters)

On tap into a gueuze glass. Reviewed from notes dated May 26, 2013.

A-The beer arrived with a tall, two-finger head of dense, barely-off-white foam. The head had decent retention atop the slightly cloudy, golden liquid.

S-The smell is moderately to intensely sour with big notes of white vinegar, tart/sour apple, and white grape. The funkiness is moderate and gives a slightly barnyard/horse-blanket background to the more dominant sour flavors.

T-The taste follows the smell for the most part. There is a lot of acidic, lactic tartness that pulls at my saliva glands from start to finish. A little bit of doughy bread lies underneath and the aforementioned horse-blanket is also present, but these flavors are mostly overwhelmed by the dry, tart, sour flavors.

M-The feel is medium body with a light hit of assertive, champagne-like carbonation that fades quickly on the palate. The finish is a touch wet and watery.

O-This is a good gueuze, but not my favorite. It doesn't have the wine-like complexity of a Cantillon, for example, but that does not mean it is lacking in flavor. On the contrary, this brew packs plenty of sour punch. I would happily drink more of this if my stomach could handle the acid and I could regularly purchase it in Colorado. (1,261 characters)

A - Pours cloudy golden amber with a one finger tall white head leaving spotty trails of lace down the glass.

S - Smells of musty basement funk, light fruitiness, damp earth, apple skins and some light acidic sourness. This draught version has quite a bit more funk than the bottles I have come across.

T - Starts off with the musty funk and fruitiness from the nose but it is much more restrained in the taste while the acidic sourness levels are ramped up a bit. Hints of grass, green apples and some light sweetness round things out. Finish is pretty dry, lingering on the palate long after the finish.

M - Medium bodied with moderate carbonation. Dry, crisp feel throughout.

O - I liked this version. It has all of the flavors I would expect it to have and it is easy to consume. A little too pricy to have all of the time but every now and then is fine with me. (900 characters)

@ Tasty Beverage

Poured from a pitcher due to its large, ridiculously thick looking, rocky head. It's more of a hazy, slim white ring by the time I get my pour. Hazy golden body. Funky, sour lemon aromas along with barnyard, leather, slight sweatiness, and light oak. Crisp, tart, lemony citrus, earth, a sort of fresh herbal quality, and hay. Acidic, dry, and massively refreshing with a slight lingering bitterness. Delicious...lots of bright, fresh flavor for 4.8%. (469 characters)

On tap for Churchill's Renaissance 2013 at Churchill's Pub & Grille in San Marcos, CA.

Pours a hazy light yellow with a foamy off-white head that settles to a film on top of the beer. Foamy rings of lace line the glass on the drink down. Smell is sour, tart, and funky with grain and acidic aromas. Taste is much the same with a sour grain flavor on the finish. There is a medium amount of acidity on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a very good beer that is tasty and easy to drink but I prefer the bottled version. (593 characters)

Poured in a 6oz wine glass on draft at the always fantastic Trappist Provisions.

Contains a cloudy, orange-amber appearance, complete with a foamy little head that appears to last quite some time. Not too cloudy in appearance, but it is reminiscent of a cider-infused concoction, with some bronzed edges on the side. No bubbles to be seen rising upwards, despite decent carbonation and slight lacing on the glass. It's definitely thick and filled with viscosity upon swirling the glass each time. Simply put, a solid, traditional looking gueuze with no complaints to be made.

The aroma is filled instantly with large funky notes classic to the gueuze style, but the fact that this is a blend of not one, or two, but FOUR world class Lambic breweries definitely adds an experimental twist to the recipe. I admit I've only had Cantillon's gueuze (and that's the "100% Bio-Lambic" recipe, so I'm not sure if it's the one employed here), and I definitely am instantly brought back to the time I first opened one of their gueuzes and melted in fascination and sour funk. This is especially notable at the finish, yet the other breweries are doing their job just fine, and what's left are tarty white grapes, lemongrass, and spiced citrus notes of various kinds. Definitely not as excessive as Cantillon's, but very complex and stands out as any gueuze should.

The flavor continues the initial tartness and sour aspects to the next level, with everything I pretty much want in a gueuze. Dry, filled with puckered citrus, and contains a long-lasting aftertaste of acidity, as well as fruity, herby notes. This is the equivalent of sucking at a giant soured orange coated with wild, wood-infused yeasty flavors! Definitely gets to the point in terms of sourness, yet the blending continues its effects throughout consumption, often going from wet to dry, herby to fruity, yeasty to woody, all in a matter of seconds! Definitely becomes more intense as it warms up, but this thing is hard not to sip.

This peaked my interest in getting the bottled version when I have the chance. My assumption is that it is relatively tamer on tap, but that doesn't stop it from being delicious. This is a gueuze I could turn myself to more often without the fear of getting dried out by all its acidity. How the brewmaster figured out how to blend a beer this complex and make it so drinkable is beyond me, but it's definitely inspirational. Don't miss a chance to try this. (2,454 characters)

First had: on tap at Monk's, Philly, PA

Cloudy copper pour with a finger or so of fluffy white head that sank to a thin layer, leaving lots of lacing on the glass. Aroma was funky and earthy, grassy, citrusy. The taste reflected the nose, funky, wet grass, earthy, green apple, lemon, with an expected tartness. About medium-bodied, moderate carbonation, and a semi-sour, dry finish. Poured from tap into mini Duvel tulip at Avenue Pub NOLA 10/2/12. Nice hay/golden color with good foamy white head. Great funky citrusy yeast...slight lemony zest maybe?
Taste is fantastic for the style...its a little more malty than most Geuze, sweet malts and the citrusy funk blend well. Very smooth for being so bitter. Really great Geuze, and what a treat to have on tap! (376 characters)

On tap at Football Pub in Rome.

Slightly transparent gold body with white head that erupted. Bartender had to wait a bit. The head settles down quickly though to a nice cap leaving lace.

Lovely musty odor here. Underlying that is some lemon and granny smith fruitiness.

This is light and easy to drink. Little fizz. No overpowering sourness at first but does hit with just enough kick for the sour fiend to love it. It feels like it layers up a bit and gets more sour as you drink it. Or I could be imagining things. Tastes really musty and is complemented by the tart and sour fruitiness of lemon and granny smith apple.

The beer is copper orange, mildly hazy, with a half inch of thick white head that coats the tumbler in lacing. The aroma is bold for the style. Aggressive and forward, more so than the bottled version. Funky, earthy, dank. Light in body with fairly low carbonation. Smooth on the palate initially, finishing zesty with a touch of vinegary sharpness. A tasty brew, I would have this again. (426 characters)

On Tap at Delerium Cafe in Brussels

A- Typical thin head with a slightly cloudy gold color. Looks like a nice Geuze.

S- The nose is more powerful than some others I've had with fruit (apples, cherries and lemons), oak and bright grain but also with strong notes of sweat and bile that are both intriguing and off putting.

T- Incredibly complex with none of the vomit/sweat of the nose. Instead the flavor starts brisk with lemon and decaying fruits with cherry, oak (lots of vanilla and some light tannins) coming in and giving way to a lactic puckering finish. One of the best I've had in this category.

M- A touch fuller bodied and chewier than typical for the style, and I enjoy the full sensation it gives. High carbonation combines with the lactic acid to keep it puckering.

D- Aggressively sour but also a bit chewy and complex. This is a geuze that let me contemplate its flavors over and over and never disappointed. The smell was really the only set back. (969 characters)

Pours a hazy, gold color. 1/4 inch head of a white color. Sight retention and slight lacing. Smells of pale malt, strong tartness, strong sourness, and a hint of grapes. Fits the style of a Gueuze. Mouth feel is sharp and crisp, with an average carbonation level. There is a strong acidity and tartness. There is no noticeable sugar addition. This was an exciting beer to try. It's a mix of a sour lemon character and an oaky backend that is nothing like I've had before. I definitely get the lamic qualities, but it also shares features of a wild ale. Very neat beer, absolutely worth trying, but it's rather expensive and probably isn't one you'll want to buy often. (325 characters)

poured into an 8oz glass. light 1/2" head, clear light golden yellow.

sour lemon and dry oak on the nose. some pale malt.

light and slightly sour up front, some light acidic notes. light mineral and light lemon and apple. towards the finish a strong emergence of oak.

very light and easy, a bit airy. dry finish.

comes off very fresh. very lightly sour, but enough to taste refreshing. great oak flavor. excited to try a bottle now. (474 characters)

On tap @ Chez Moeder Lambic Fontainas (Brussels, Belgium) on 7/5/12. Served in a tumbler.

Pours a hazed apricot color in the glass, with a thin 1-2 fingers head of off-white foam. This maintains some rich edges, leaving back a cascade of light spotty lace. The aroma is bright and tart in the nose, with a touch of underlying cheesy funk. A gentle sugary sweetness mixes in off the edges.

The taste has a bracing tartness to it yet still manages to stay fairly refreshing. Touch of softer fruit is present, along with some mineral notes and a light sugary backing. Funk and wood comes in off the finish. The mouthfeel is medium bodied with a lively carbonation that hits the roof of the mouth before getting a little thicker feeling on the tongue. This has a pretty quaffable feel to it overall.

This is a really nice Gueuze that stayed more tart than sour and benefited from a sprightly feel in the mouth that helped keep this on drinkable side. I’m glad I tried this one. (981 characters)
