Pours a murky purplish-red with a foamy bone head that settles to tiny wisps of film on top of the beer. No lacing on the drink down. Small chunks of sediment sink to the bottom of the glass after the pour. Smell is sour and tart with malt, acidic, and plum or other dark fruit aromas. Taste is much the same with sour dark fruit and acidic flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a low level of carbonation with an almost flat mouthfeel. Overall, this is a pretty good beer but there is definitely a lack of carbonation in this 375 ml bottle, which unfortunately diminishes what has the potential to be a great beer.

Enjoyed out of a dark green 750 mL bottle with a classic cork & cage topper. The label on the neck indicates that this is a 2013 vintage. Poured into a Boulevard Smokestack series tulip glass.

Appearance (4.5) - a moderately aggressive pour yields and effervescent and highly dynamic head about a finger and a half deep, but it doesn't stay that large for long, dissipating fairly quickly to leave a fizzy ringlet around the edge of the glass and no film or lacing. The foam is mostly white, with just the slightest cherry pink hue to it. The body, on the other hand, isn't subtle in the slightest, providing a bright reddish-pink tone, reminiscent of red grapefruit flesh/juice. Around the bottom of the glass, there is a slight lightness to the hue, and the overall body is cloudy, with zero visibility through the murk.

Smell (4.25) - Wonderful aromas of musty, funky wood and sharp acidity from the lacto and souring bacteria, and while you can definitely detect notes of red plum, my only complaint is that it's not present enough. The acidity and notes of red wine vinegar dominate the subtle touch of fruit. The finish brings to mind hints of granny smith and lemon zest.

Taste (4.5) - Perhaps the plums were hiding in the aroma in order to appear with fanfare on the tongue. The subtle notes of plum have now grown into a more robust representation of the fruit. It's a good fruit to choose, because for all it's shyness on the aroma, the touch of tartness from a ripe red plum is very complementary to the more piercing tones of the souring bacteria and wood aging. Some faint vinous notes give a slightly jammy characteristic to the taste.

Mouthfeel (4.5) - Light bodied and moderate to low carbonation--with just enough to put on a show of head at the beginning before hiding away. The feel provides moderate puckering, and the finish is very dry.

Overall (4.5), a fantastic beer, and while I'm not surprised, given the adeptly done Gueuze Tilquin, the plum adds a fantastic depth to the otherwise classic sour beer. Not too many are doing plum lambics, but based on the taste of this one, perhaps more brewers should be.
