A: Amber, dark orange ale. Large head which disappears slowly into thin lacings.

S: Nice, fuity (citruses), some esters, typical Chimay yeasts.

T: Not as booming as other trappist ales, but quite well balanced between malty sweetness from caramel malts, fruity notes and yeasty taste. Light bitter aftertaste with quite a long finish.

M: Medium bodied with nice carbonation. Not too light. Just nice.

O: Not the best Trappist ale, for sure, but a well done, good , with its own particularities, refreshing beer.

(purchased at Binny's - bottle code L13-776 - poured into a balloon)

A: cloudy copper liquid... very nice, tight, sudsy off-white foam with tiny bubbles - easily identifiable as a bottle-conditioned (perhaps infected) Belgian ale... good length of head retention, but no lace of note

S: medium-dark, bready melanoidins... dark grape, perhaps a touch of baked apple... faint dusting of cinnamon and sugar spice... almost a lager-like graininess... sort of a dying leaf aroma reminiscent of autumn in full swing... mist of spicy alcohol in the back... overall, pleasant smells, just not terribly vibrant, almost zapped out

T: (not so) surprisingly toasty, with a hint of an almost bacony smokiness in the distance, plus a light swell of caramelized grain and a dull, lingering (unsweet) dried apple and rose petal in the finish... naked malt flavors quite up front and arguably balanced with some familiar spicy yeast phenolics... strange, herbal, almost za'atar-like spectre in the aftertaste... nice punchy attacks, but not much underneath to give it some depth - guessing this bottle has been sitting around to the point of over-attenuation from the conditioning yeast, perhaps poorly handled at some point

M: about what one would expect considering some of the observations about handling and yeast: light-medium bodied, expanding carbonation sensation on the palate upon sipping, flat-dry, a bit sharp, with a dull, medicinal heat that keeps at the back of the roof of the mouth

O: this is an intriguing beer, one having been brewed by Chimay - I thought I read somewhere that the monastery was once a Trappist brewery - they are currently producing Trappist cheese, and I would imagine this beer goes fairly well with it... there's certainly some dynamic, uncommon flavors in this and it's a beer I would certainly revisit again if I were to come across a bottle in Europe

A soft, tan head rests atop this amber brew. Aroma of pear, peach, yeast and sugar. Tastes creamy with persimmon, ripened pear, a squirt of orange, a hint of brett, Belgian yeast and an appropriate hop backdrop. Medium bodied with enough heat to start the party. Totally surprised by this excellent find!

75cl bottle poured into a Sint Bernardus goblet at 45°F per directions on the label. I normally do not cool anything this much. No obvious best by date, but the code I did find started with 13.

Smell - hops
Appearance - slightly cloudy, slightly reddish tan with an inch of fine bubbles forming a pale tan head. Little lacing but the head persisted to the end of the glass. Looked good in the goblet.
Taste - Belgian yeast, a bit of candy sugar, a hint of Brett and nice hops. A few sips had a slight metallic tang but not annoying. Taste did not develop much as it warmed.
Mouthfeel - seemed a bit thin for the style. Perhaps I could have made an effort to conserve the carbonation but I did make a careful pour. Slightly coated the tongue which is a minus for me.
Overall - good but not a lot of distinguishing character. It's as if someone set out to brew a generic Trappist. I would drink this again but don't feel compelled to buy more.
