A: Poured a ruddy, crimsonish-brown color with a dirty white cap whcih fades rather fast leaving a nice collar, some bubbles and minimal lacing. Pretty much what I was expecting

S: Oh boy. Old wood, bourbon, some spices, faded citrus hops, pickle juice, yup, pickle juice. Not at all pleasant but the other sensory notes make up for it.

T: Immediate thought...a splash cheap bourbon and old spent barrels. Yup, I said it. Bourbon comes out upfront with a hard-on and then some old woody, Earthy notes...the base Behemoth is a mere shadow of her once former BBW self because this shitty bourbon barrel fell on top of her. I detect pickle juice, caramel, toffee, citrus and piney hops buried beneath this overhyped and overpriced fat disaster. The finish is rather, hot, unpleasant, sticky at times....

M: Medium-full bodied, enough said.

O: Not exactly sure why this "world class", hyped or priced at $30+ or so. This beer reminded me of BA Ruffuan and BA Bigfoot, old spent bourbon barrels killing a fantastic base beer. I'm so happy I was able to tick this but so disappointed at the same time.

Reviewed from notes. Most recent release, 2012/2013. Poured from a 750 ml bottle into a 8 oz snifter.

A- pours a dark copper with a half finger tan head. No lacing.

S- sweet toffee, brown sugar, dark fruits and bourbon

T- caramel, toffee, brown sugar, dark fruits, bourbon and faint pine.

M- full body and medium carbonation. Slightly dry.

O- very good BA Barleywine. Fairly sweet with some nice dark fruit notes, bourbon takes a back seat to the base beer.

Enjoying as part of the 2013 Blizzard Nemo celebration. Since I couldn’t make it to Night of the Barrels, it was fitting to open and enjoy this as we get dumped on.

A finger of head forms then fades immediately. Beer is a hazy shoe leather brown with a spritz of carbonation escaping at the edge of the glass. The head is knocked down immediately and a thin formed.
Aroma is nice.. almost bordering on excellent. Caramel, vanilla and a touch of apple cider. Thick in your nose. A hint of bourbon, but not in your face.

Ok, we have a nice one here. Certainly no surprise. Immediately I can tell this is very good, but isn’t quite the caliber of the Blithe’s from Dry Dock.. (in my opinion) But the comparison alone means we are in rarefied air here. So… that should be taken as quite a positive. Initial deep malt and sweet caramel gives way to lots of vanilla and bourbon. For me the heat from the abv/bourbon influence is spot on here. Right on the edge and it works quite a bit. I mentioned apple cider in the aroma and the flavor also reminds me of this. A really freshly pressed cider… Not sour, not negative… actually quite nice. The bourbon, vanilla aftertaste is fantastic.

Bold body, but just shy of sticky. The heat is on the edge but doesn’t cross the line.
Enjoying this and very happy that I was able to secure a bottle. Man, I would love to be able to score another at some point over the next couple of years…..
Bourbon Barrel Aged Barleywines are really becoming my favorite at this point.

Three Floyds Barrel Aged Behemoth

Poured into a tulip glass from a 750ml bottle.
Bottle: 271/454

Pours a nice murky brown with a thin dense off-white head. This is a very murky brew. The head recedes down to a nice thin ring around the glass. (4.0)

There is a sweet bold aroma. Nice Bourbon notes with some good apple juice notes and some woody notes. There is also some nice caramel and molasses with some nice slight hoppy citrus notes and some slight vanilla. (4.5)

Starts off with some nice intense sweetness. Awesome molasses and caramel notes with great bready malt undertones and some nice apple cider notes. Cinnamon and slight vanilla notes are present as well. Very interesting brew and not similar at all to the Non-BA Behemoth, it is still very delicious and complex. There are some woody notes and some slight boozy burn. The Bourbon notes are delicious and intense and are perceived through the whole brew. Nice caramel and oak notes. Soo good. The Bourbon notes are also complimented by some underlying strong hops that at first I couldn’t place because of the bourbon notes. As the beer warms you can really appreciate that nice Bourbon heat mixed with some intense hop notes and then it tapers of with the molasses and the nice vanilla and woody cinnamon notes. The mouthfeel is perfectly oily and creamy but with enough boozyness and heat and good carbonation. This is definitely a sipper but delicious. (5.0)(4.5)

Very good brew. Very different than the base brew but still a very delicious with great sweetness and Bourbon notes, great caramel and molasses notes with an awesome blend between the sweetness and the hops. (4.5)

Appearance: Hazy, almost muddy orange with thin head that recedes to a collar pretty quickly.

Nose: A blast of fruity hops escape the bottle as soon as it's uncapped. Once in the glass it has a stronger toffee and burnt sugar note, along with nutty, sherry-like oxidation. This is surprisingly oxidized, but in a good way - more sherry than cardboard. Bourbon is present but integrated, and there's a good deal of hoppiness left on the nose, lending a touch of peach and pineapple along with a bit of grassiness that makes me think of old IPA.

Palate: Similar to the nose, this beer has an intriguing mix of oxidation, barrel and hops. Oxidation is front and center, largely nutty and leathery in character with a bit of sherry beneath. Malt sweetness is amplified by the barrel, but it isn't a syrupy beer by any means, and burbon isn't really overt here. Hops contribute a mild bite to the finish and a touch of citrus, primarily pineapple and stonefruit. I'm surprised that the barrel aging hasn't caused the hops to disappear completely, but they're not unwelcome.

Overall: This grew on me quite a bit over the course of my glass. Really interesting stuff.

The appeance was murky with a orange/reddish hue.

The smell was nice. sweet/bourbony some hops in the aroma.

taste - lots of bourbon and sweetness but a little too hoppy for a bourbon barrel beer in my opinion. Considering the base beer it's understandable. The hop and the bourbon just dont play well together.

Not my favorite barrel aged beer and not nearly as good as the 2007 version. The 2007 version was a bourbon bomb which this version is not.

Still a decent beer. I'll see how my bottle 22 ages.

Reviewing the Barrel Aged Behemoth from Three Floyds Brewing Company.
Score: 93

Bottle number 219/454 from the brewpub release in February 2012 release. Served in a Delirium Tremens balloon glass and enjoyed on 05/11/12. Review is from iPhone notes.

Appearance: Pours a murky caramel color with a thin layer of tan bubbly head at pour. Minimal lacing and retention. 4/5

Smell: Brown sugar, lemon sugar cookie, and caramel. A little oak and smooth bourbon. The aroma is wheat wine-esque. Grassy hops. Light fig. Pineapple and butterscotch. Burnt sugar. 4.25/5

Taste: Bitter and grassy lemon citrus hops, brown sugar, toffee and caramel. A little fig and dark fruit sweetness. More caramel and bourbon as it warms. There is a modest wood flavor too. The flavor is a step down from aroma initially, but it gets better as it warms. Well balanced with a light booziness to let you know this beer means business. Lingering lemongrass and fig flavor. 4.25/5

Mouthfeel: Full-medium bodied, low carbonation. Creamy mouthfeel. The finish is a touch sweet. 4.5/5

Overall: A really solid barrel aged American-style barleywine. I was skeptical as to what barrel aging would do to such a hoppy beer, but this one turned out quite well. The beer struck a nice balance between the sweetness from the barrel aging and the bitter grassy citrus from the base beer.

Recommendation: This is a beer worth seeking out, but, like Baller Stout, it's not really worth the $30 price tag.

Pairings: Morel chive cheese (sold at Hy-Vee).

Cost: $30 for a 750 ml bottle.

A: Pours a murky dark peach color with a thin yellow head forming on the pour. It keeps a thin film and leaves some soapy looking lace behind.

S: Very nice. Sweet bourbon and light oak with a light citrus hop presence that stuck around nicely from the base beer. The finish is a sweet butterscotch flavor with a little vanilla also.

T: Caramel and citrus hops are there on the first sip and start to meld with smooth bourbon and oaky vanilla that comes on the finish.

M: Full bodied, but not chewy or heavy. Incredibly smooth with a spot on medium level carbonation and a nice barrel sweetness on the finish.

O: Incredibly smooth and delicious with the alcohol completely hidden. Great balance in the flavors and this will only get better. It'll be nice to try this in a year or two when the hops fade and the maltier side starts to shine.

A- Murky brown with a thin bubbly off white head. Looks like apple cidar.

S- Bold aroma with bourbon and green and red apples, caramel, dark fruits, orange, pineapple, brown sugar, and bready malt

T- follows the aroma with sweet bourbon, slightly tart apples, caramel, faint tropical fruits with pineapple and bready malt.

M- medium carbonation and body. Finishes a bit dry. The abv is hidden pretty well.

O- Really liked this and was surprised how different it was from the regular behemoth. Some tartness and barrel aging made this quite a tasty and complex beer.

On-tap at the Map Room. Served in a snifter-esque glass.

A - Murky orange-brown body - not far from clogged toilet in appearance. A small orange-tinged foam quickly sizzles to a thin ring and partial cap, leaving a few spots of lace.

S - Reference quality barrel-aged barleywine. Perfect balance of bourbon, oak, vanilla, caramel, burnt sugars and light citrus hops. Surprisingly little overt alcohol too.

T - The taste is a bit of a step down, but still among the best of the style. More bread character mid-palate, with the caramel and burnt sugars only show up late on the palate. Doesn't pop in the same way as the aroma. Some oaky barrel tannins in the finish help balance the sweetness.

M - Full-boded, sticky, chewy, and just plain weighty - perfectly suited to the flavor profile and ABV. Lower carbonation, with a light dry, tannic, finish. Alcohol is warming but never intrusive.

D - I finished this faster than the other two, lower alcohol, beers. I wish this popped up more often, as I think it's one of Three Floyds' strongest offerings - much more enjoyable than Barrel Aged Dark Lord in my book. I can easily see this causing an equivalent hangover to Abacus.

Pours a very hazy brownish orange. Not a pretty pour but a nice touch of yellowish head. Smells hoppy and bourbon heavy. Tons of big malt presence on the nose. Tastes sweet and malty. The bourbon melds well with the malt profile. The hops are fairly subtle on the tonue but smooth and very drinkable

From 04/30/11 notes. Had on tap at Dark Lord Day. Love the normal Behemoth, so jumped at the opportunity to have this one.

a - Pours a murky dark mahogany brown color with less than an inch of tan head and light carbonation evident.

s - Smells of bourbon, oak/wood, caramel malts, molasses, sugar, dark fruits, and light vanilla. Smell is amazing and much like the normal Behemoth fused with bourbon.

t - Tastes of bourbon, caramel malts, wood, dark fruits, sweet fruity malts and sugar, vanilla. Bourbon is strong but really great in my opinion.

m - Medium to full body and low to moderate carbonation. Very smooth and easy to drink; surprisingly not a lot of heat considering the ABV.

o - Overall I thought this was a nice improvement on an already great beer. I've had some bourbon barrel aged beers where the base beer was superior (like BA Blackout vs. normal Blackout in my opinion), but in this case the bourbon barrel aging did wonders for the base beer. Would love to have this one again sometime.

Aroma:Bourbon, sweet malt, and dark fruits.

Appearance:Muddy brown with very little head

Taste:The bourbon really overpowers all of the other flavors on the first few sips. After you get used to it, the deep rich malt sweetness comes through, as well as dark fruits. Buried beneath the other flavors is candied orange peel, which adds an interesting complexity.

Mouthfeel:Thick and syrupy with some hot alcohol.

Drinkability:This is an amazing transformation of the Behemoth to a barrel aged beer. Tons of complexity, and very delicious.

Had on tap at Three Floyds.
Pour is a dark brown with a glimpse of mahogany to it. Low head but hey it's 12.5%. looks slick and oily.
Through out the time drinking this over almost an hour i couldn't stop thinking the aroma and flavors were so much like christmas candies, with holiday spices and sugary sweetness, i think it is under attenuated honestly. There is a very prominant alcohol presence that adds to the overall flavors and i feel is needed to cut the sweetness somewhat, with out it would become cloying fast.
On the palette it hits like the appearance suggested and is very oily over all and is sticky and coating.

A great brew probally worth making the hour drive, and then waiting an hour outside before getting in, for a chance to try it, might not a second time though. Made some new friends while there too.

Appearance: This pours a murky brown color, much darker than regular Behemoth. Molasses brown in the middle, walnut brown at the edges, with a creamy tan head that quickly recedes to a ring, leaving just a bit of lace.

Smell: This is surprising, I mostly just get bourbon here. Some oak, vanilla, and maybe some general dark fruit. All of the caramel malt and hoppy aroma has gone away.

Taste: Bourbon soaked all the way through, it almost drowns everything else out. Some caramel sweetness up front, followed by some dark fruits, oak, and vanilla that add a little bit of depth, but there is no hop presence. The bourbon just rolls over anything that would be left underneath. The finish is lightly sweet and heavy on the Woodford Reserve.

Mouthfeel: This is full bodied for sure. The creaminess gives the feeling the body is crushing the carbonation. Quite sticky. It has a harsh boozy feel in the throat and a pleasant alcohol warming in the stomach. The juiciness from the original is gone. It has more of a flat, somewhat dry bourbon feel.

Drinkability: One and done, definitely. I like barrel aged beers as much or more than the next guy, but this was just too much bourbon for me. It definitely brought down an otherwise good beer.

Finding this was still on-tap was the major victory of the Three Floyds Brewpub Experience today. It pours a murky burnt sienna topped tonsure-style by a ring of glowing off-white foam. The nose comprises bourbon, a healthy amount of maple syrup, vanilla, oak, molasses, and caramel. The taste does not deviate very far from this plan, though the maple syrup and molasses are decidedly diminished, and some light clove and nutmeg notes find their way into the mix. The body is a hefty medium, with a light carbonation and a kinda chewy feel. Overall, I was a bit disappointed that the base barleywine was so o'ershadowed by the barrel-aging, but the end product here remains pretty dern good regardless.

As soon as I found this beer was still on tap I decided that it must be mine. This was served a murky looking brown with not much head on it, which may not be too appetizing until you realized it sat in an oak bourbon barrel for a long time. At that point it looks pretty tasty. The smell was unbelievably good. There was apparent the aromas most found in bourbon whiskey. There was hints of oak and vanilla along with the bourbon itself. The flavors while created on a backbone of heavy malts (the hops had long since died) was actually quite bourbon like in flavor. There was a twinge of the dank oak along with a peat smoked malt flavor that gave it a rather interesting harshness, that was by all means not bad. This beer had a hard time trying to figure out if it wanted to be a good whiskey or a barleywine. It was both and neither at the same time.

Imbibed at the FFF Pub 02/04/2011.

Appearance -- Pours a dark ruddy brown with a sudsy tan ring. A bit of head would have been nice, but otherwise it looks good.

Smell -- Sweet bourbon, vanilla, toffee, and dark fruit. Very inviting.

Taste -- Bourbon, damp lumber, vanilla, dark fruits, toffee, caramel, muted citrusy hops still kicking. The barrel characteristics are certainly present, but not so overwhelming that you can't tell that the base is Behemoth. Really quite nice.

Mouthfeel -- Full-bodied with milder, almost creamy carbonation. Subtle wood tannin dryness is perceptible. Very smooth, and a good fit for the flavors.

Drinkability -- Of the handful of barrel-aged FFF beers, this is by far the best. While the others were so hot and boozy that the base beer was totally overwhelmed, the mellow bourbon really elevates Behemoth and gives it a new character. Total win.

A: deep ruddy cloudy dark amber to chestnut. Unexpectedly nice persistent light brown head and lacing.
S: the citrusy hops found in regular fresh behemoth aren't there, in their place is a complex bouqet from the year in woodford reserve barrels-toffee, dark honey, dried stone fruit, vanilla, light bourbon, fruitcake, nuts, etc. Very complex and certainly I'm missing some notes. Long complex sweet finish, some spice and dark rum or whisky on the end.
M: thick, viscous, sweet, sticky, and full.
D: very complex sipper. A must try for barrel aged or barleywine fans.

I've drank this two times at Three Floyds, most recently today. I had two snifters and loved it.

A: Murky brown. I'm being generous with appearance because a small group of bubbles formed a skull on the beer's surface. Scout's honor. Pretty bad assed.

S: When the beer warmed to its proper temperature, it smelled like buttery toffee and bourbon.

T: Dynamic. Buttery toffee up front, and then bourbon, vanilla and nuts. If you dig, a touch of dark fruits, maybe light milk chocolate.

M: Appropriately low carbonation and full for style. Sticky, too.

D: Delicious. This is to barrel-aged barleywines what BCBCS is to barrel-aged stouts: a gourmet candy bar soaked in bourbon. No heat to be found but it is mildly warming.

6th taster - Port's Barrel Blast
2008 Vintage

A - Ruby light grape color - copper. Little to no head from the poor on tap that had a light color...

S - Strong vanilla, bourbon, oak sweetness, smoke warmth, peat

T - Bourbon, vanilla, oak sweetness with a peaty smoky finish. The strong taste makes up for the tricky light color.

M - Little to no carbonation, very smooth, little bit of heat that made it more enjoyable - this went down very smooth

D - Very nice drink - one of my favorites at the event. Vanilla, oak, peat like - reminded me somewhat of all the flavors I like in a scotch, but in a very smooth drinking beer. Very much enjoyed this one...

On tap at barrel blast

A: Poured a reddish brown in color with brown highlights that had a almost no head and left virtually no lacing sticking to the glass.

S: lots going on here but had lots of caramel, bourbon, booze, and toffee, but had hints of vanilla and citrus notes as well.; very nice aroma.

T: the bourbon added some nice complexity to the behemoth base brew which had lots of caramel like the nose bourbon that was not overwhelming, vanilla toffee accents and a touch of toffee.

M: the brew was medium in body with a low amount of carbonation which had a sweet, bourbon, slight boozy, sticky finish.

D: very nicely done barrel aged brew that was not over done but was definitely a sipper.

2008 vintage on tap at the 2011 Pizza Port Barrel Blast.

A: Pours almost still with a few stray bubbles. Color is a light crimson.

S: Prominent toffee and lesser notes of caramel accompany a strong hop profile, redolent of earth and pine. Bourbon is not overpowering, but it's nicely integrated.

T: Upper moderate piney hop bitterness balanced by prominent bourbon toffee notes. Well balanced. Booze is strong. Finish is aggressive and bitter, with lingering hoppy toffee bourbon booze.

M: Upper medium body with low carbonation.

Overall: A nice and aggressive barrel aged American Barleywine. A little like Alpine's Great with more hops and less toffee.

A- A nice red/brown burnt color. A nice head forms and holds on for quite sometime.

S- Bourbon, bourbon, and more bourbon with slight sherry like notes poking through. Most of the hop aromas from regular behemoth are non existent.

T- A true sipper. The bourbon and age have done wonders on this barleywine. The one year in the barrel has created an awesome liquid to be savored by kings, queens, and me. I would never have guessed 11%. The age has mellowed out most of the bitterness. Barrel aging barleywine should occur more often. A wonderful marriage of flavors. Top 5 beers i have ever tasted.

M- Medium bodied, smooth and creamy. Decent carbonation.

D- Even though it is 11%, i can drink these all night. As a matter of fact, i drank this until the keg was gone. I officially had the last glass. WOW. I cant wait until next year when it comes out again. Keg was gone in less then 1 day.

On tap at DLD 2009. All the reviews for the Barrel Aged Behemoth indicate that it was a bourbon-barrel aging, so I've added this one. Note also that this was not the oak aged with cherries--unfortunately, I didn't get to sample that one.

A: Fairly dark, molasses type color. Slightly reddened with a creamy off-white head.

S: A good whiff of oak alongside sweet and creamy malt. Quite similar to the regular Behemoth, but quite a bit lower on the hop scent than fresh Behemoth.

T: Sweet and complex. The oak has definitely done a number here, and comes out very well. It melds with Behemoth's flavor quite well, creating a subtle spiciness. Some caramel flavoring is definitely there.

M: Thick, full-bodied, and very creamy. Low to moderate carbonation.

D: Very good stuff. The flavor of the oak is a little much to drink a lot of this, but that just encourages slow sipping. Solid beer all around. Hope to have this one again.
