So, when the wife, from the sofa yells, "Get me chineese for dinner" I immediately start thinking, hmm, spicy food. I should drink a nice malty beer. So I open my fridge to find a selection of some of the northwests best DIPA's. Luckily, in the back is this gem left over from when Young Max stopped by last week. While calling in the pork dumplings and such I pour strong, down the center and wait for it to settle. Then pour again. Building a nice pillowy head that lasts about as long as the wife's next tirade. The carmel sweetness of the odor mingles lightly with some hints of fruit. The deep amber liquid is showing some slight lacing now. As the food arrives, it hits it's peak temperature and I'm ready to drink. The carmel notes carry through in the flavor and it offsets the heat of the food excellently. The mouthfeel is a bit light, but the carbonation is good and it cleans the palate. A nice beer. I may even forgive the wife for the shouting.
