Followed the brewer's request and laid the bomber on the table and rolled it to get the yeast in suspension before consumption.
Appearance: Poured into a tulip glass with a large white fluffy head. Body is a dark golden color, semitransparent and hazy.
Aroma: The yeast character really stands out here, straight forward estery yeast. Bananas and other fruit combine with clove for a distinct belgian farmhouse yeast aroma.
Taste: I can see where the brewer wanted this beer to go, but I don't think it gets there fully. Hops up front are piney-grassy bitterness. As the flavor changes and the yeast comes forward the beer gets extremely dry. The yeast has notes of clove, spice, and a touch of lemon fruitiness. Maybe a little more malt or sweetness and less cloying dryness would help round these flavors out?
Mouthfeel: Carbonation level is right on for the style, but the dryness hurts the mouthfeel too.
Overall: I like my saisons dry, but with the amount of bitterness and hop flavors present in this beer some sweetness or malt flavors are needed to meld the hops and yeast together. A good beer, but a bit out of balance. I like the direction that Backlash is heading in.
