Celastrina, or Hops Blue, is a tiny blue butterfly found living on wild hop plants along the Front Range of Colorado. Little is known about this rare species, but we hope to change that. Celastrina Saison pays tribute to this winged creature with delicate hints of banana and clove-like flavor, typical of a traditional Saison, that flutter with a subtle spice character derived only from the hops used. $1 from each bottle sold will go to the Colorado Natural Heritage Program to help fund research of the Hops Blue butterfly.

From notes. L: Pours hazy straw under a voluminous clingy, persistent 3” off-white foam collar that rises up over the rim of the glass.
S: Fruity, spicy, herbal, flowery with traces of malt and a touch of fresh compost.
T: Fuity, sour dough bread, over ripe fruit, finishes dry.
F: Creamy, medium to medium light body, medium high carbonation.
O: Odell has done some nice work with the yeast to produce very luscious light fruit flavors. (443 characters)

A-Pours a darker yellow. Mostly clear bodied. Big, sudsy head. Also the cork almost took out my eye when opening.

S-Smells a bit phenolic. Quite floral. Some banana. Also some apple juice. Lightly spicy.

T-Sweet with some grassy hops. Just as phenolic as the nose. Some lighter honey flavor. Plenty of floral flavors. Bananas. Some breadiness and finishing spice.

M-Medium bodied. Softer carbonation. A little bit creamy. Hint of booze.

O-Mostly tasty. Nothing groundbreaking here. (485 characters)

On draft at the Odell Brewery - June 2013

A - Golden, with clarity, 1 finger of head and some sticky lace left on the glass
A -4.75: Huge hop kick in the nose! Amazing bitter and sweet.
T - 4.5: Perfect well balanced DIPA. A little more sweet than bitter. Incredible taste
M - Medium bodied and well carbonated. Great on the palate
O - As good a DIPA as you will ever find. Clone this one, and pass it around. Well done! (422 characters)

Thanks to GRG1313 for sharing this one at his tasting.

Pours a murky yellow-orange with a foamy beige head that settles to a film on top of the beer. Small dots of lace slowly drip into the remaining beer on the drink down. Smell is of malt, grain, yeast, spice, and citrus aromas. Taste is much the same with yeast, spice, and slight citrus flavors on the finish. There is a mild amount of spice bitterness on the palate with each sip. This beer has a high level of carbonation with a crisp and prickly mouthfeel. Overall, this is a pretty good beer that is tasty but the carbonation level on this one is a bit too much. (624 characters)

served in odell glassware - cloudy light orange body, lively carbonation, huge frothy white cap with heavy retention. A classic saison - heavy carbonation, nicely spiced, some citrusy hops (but not to the level of the lovely Wellspring saison), a little pineapple and tropical fruit. Would compliment most dishes, but on new years day, it happens to be some pulled chicken nachos with blacked eyed pea salsa and avocado. Glad I brought this back from the Fort. (499 characters)

Reviewed from notes dated 11/9/13. Enjoyed out of a brown cork & caged 750 mL bottle. I'm pretty sure there was a date on this one, but I don't seem to have written it down in my notes. Poured into a small snifter.

Appearance - A hazy, golden honey color, with a wide range of shades of orange and yellow and even some darker amber highlights where the body is shaded by the big rocky stark white head. At about three fingers, I'm forced to settle in for the long haul as it slowly dissipates, leaving strings of sticky lacing on the sides of the glass. The bubbles expand and leave a honeycomb of enormous pocks. Also leaves faint rings around the glass once I finally start drinking it down. The foam never completely disappears--well, not until I polish off the last drop anyway.

Smell - Lots of light, floral aromas with a subtle sweetness like fresh baked pastries. Almost like walking through a field of wildflowers. Some fruity phenols as well with a VERY faint banana aroma and some clove spice, but nothing that really stands out. Overall, this one smells like a pleasant blend of "polite" aromas, if you will. In other words, it's a tasty saison that I can't imagine being able to offend anyone's individual palate.

Taste - A little more aggressive than the smell, now I pick up a little bit of faint pungency (if pungency can be faint) from the hops, although it doesn't overpower the still dominant floral tones. Here the clove and some peppery spice become more present, as well as generic yeasty phenols. The banana I detected in the aroma is not really present in the taste.

Mouthfeel - Pleasant and light-bodied with a good amount of carbonation--more than moderate. Finish is semi-dry and entices the next sip.

Overall, a more than competent offering from Odell. Not as hoppy and bright as their Wellspring dry-hopped saison, but it exhibits a deft touch and a smell/flavor profile that would work well with many types of food. The yeast is the hero of this pleasant farmhouse ale, but it doesn't overpower. Would love to see this one get brewed again moving forward. (2,090 characters)

App: Pale yellow with a slight haziness. Greenish tint around the edges of the glass. Thin, soapy head with no lacing, but good overall retention.
Smell: Spicy almost potpourri like aroma. Very balanced notes of clove and banana. Pretty typical of a saison, has a flower like aroma.
Taste: Pretty standard saison profile, pepper and herb spiciness coupled with fruity notes of yeast, fading to sweet and grassy over time.
Mouth: Heavy and even. Subtle carbonation that doesn’t distract from the strong flavors. (514 characters)

A: Upon taking off the cage, the cork started protruding from the bottle and rapidly took off until it collided with my ceiling. The beer is hazy yellow in color and has a light amount of visible carbonation. It poured with an eighth of a finger high off white head that hardly died down, consistently covering the surface.
S: Light aromas of floral blossoms are present in the nose.
T: Similar to the smell, the taste has interesting flavors of floral blossoms along with hints of spices towards the finish.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: This saison has lots of floral aromas and lavors, but interestingly they are more like floral blossoms tan floral hops. (727 characters)

On a business trip, purchased in Sante Fe, NM and brought home to Virginia.
Poured into a tulip.

A very nice beer, refreshing yet complex. A saison with all the style’s characteristics well respresented. A beer I would definitely drink again. Did not finish the bottle because I gave my mother a sip and she wanted the remainder.

A – Pours a slightly cloudy pale orange with a 3-finger off-white dense mousy head. Well carbonated. Belgian lacing.

S – Fruity, floral, peppery.

T – Slight lemony tartness, faintly sweet, bitterness in the finish.

MF – Medium-light bodied, fizzy on the palate with a medium-dry finish. (631 characters)

750 ml corked bottle. No date stamp which is unusual for Odell. Maybe it was planned as a one-off release.

Poured into a goblet, Celastrina is a pale golden yellow color with thick white head that builds before it settles.

Aroma is appropriately fruity, floral, and funky like a good saison should be. It's more fruit forward than anything.

Flavor is fairly bold for the style with plenty of hops in typical American fashion. It has the same nice floral and tropical fruit flavors from the aroma but it's stronger than expected. The yeast adds a lot of character but there's more bitterness than expected.

Mouthfeel is medium bodied and strongly carbonated. It's bottle conditioned and the carbonated seems about right for a saison but more than I care for typically in my beer.

Overall a solid saison but there are certainly some better ones out there at this price. Next time I would go for a true Belgian. (913 characters)

Poured from the bottle a cloudy nectarine color with one finger of bubbly off-white head. Not much left behind in the lacing department.

Nice bright aroma of pineapple, tropical fruit, cloves, yeasty funk, and light cracker.

Bright and lightly-tart taste of pear and green apple along with white pepper, cloves, yeast, and table crackers. Flavor lingers thru the finish.

Medium bodied, dry and clean with a sharper carbonation.

This is a very tasty Saison from the folks at Odell. Bright, clean and delivers a flavorful personality. (536 characters)

I'll make this one short. Calestrina is truly an above average Saison from the boys at Odell. The pour in a tulip holds a high head that lasts and leaves plenty of lacing. Smells of strong spices, pineapple, cracked pepper, mango and a touch of bread aroma. Easy to sip on, mango and pineapple really push at first, followed by a bready finish and a touch of bitterness to round things out. Good mouthfeel, not to thick and has a nice balance of body to it with a good amount of carbonation to keep things fresh in the palate.
If you can buy a bomber of Calestrina, do it. You wont regret it. (593 characters)

Overly carbonated so I had to wait with this beer. Beautiful color and lacing for sure, but over looked because of the carbonation. Very earthy and hay smell to it. Light to drink and very easy to drink. I enjoy the beer, but I would prefer to see it in a 6 pack rather than a bomber. Great idea by Odell, but missing that something in the taste to push it over the edge. (371 characters)

Took the cage off, started reading the label & BAM! The cork went flying, luckily no one's eye was put out nor was any beer wasted!

Pours an effervescent gold/honey with 3+ fingers of meringue like pearl colored head. Stellar head retention & lacing, stays bright through the whole bottle

S: Grassyness, hay & a touch of sourness & cloves

T: Pears, a touch of golden delicious apple, green apple skins, clove & dryness up front. Pears, faint apricot notes, grass & cloves as this warms, plus white grapes & honeysuckle. Finishes dry, fruitty & crisp

MF: Medium bodied with delicate carbonation

Pretty drinkable, a nice not over complex saison (647 characters)

Appearance: orange gold, with a beautiful foamy, ivory head. No lacing.

Aroma: delicious fruity esters from the yeast, along with citrus from the hops.

Taste: tasty spicy notes form the yeast and hops. Very mild hop bitterness balances the malt nicely. Citrus is also present from the hops, as are fruity notes from the yeast.

Mouthfeel: fairly effervescent, though the carbonation is not overdone. Coats the tongue and mouth nicely with flavor, but does not linger too long. Fairly smooth given the carbonation level.

Overall: delicious! This is a winner in my books, as everything is nicely balanced. The hops are allowed to shine without overpowering the palate with bitterness, and are complimented well by the malt and yeast used. Odell has done an excellent job of crafting a Saison that is both complex and balanced, and is an easy-drinking and undeniably enjoyable brew. It is achievements like this beer that make Odell one of my favorite breweries. (962 characters)

Celastrina pours a clearer golden color with a nice lacing head. Their is a sweet fruity flowery aroma. The taste has some nice banana notes, flower like flavors, and a nice yeasty undertone. Nice body, drinkable, and flavorful. Overall its a sweeter easy drinking clean saison. (278 characters)

Serving glass: Poured from bottle into Tulip.

Appearance: Cloudy honey with huge, foamy white head that persists for awhile and clings nicely.

Smell: Banana, clove, oranges, bread and pepper.

Taste: Bready and fruity, with banana and citrus. It is earthy and musty, but not at all tart, as many of the more earthy Saisons are. Cloves and hops are very noticeable on the finish, with the hops deserving special mention for strong orange and pepper notes.

Feel: High carbonation, medium body that is slightly too sticky and not effervescent enough. Semi-dry finish.

Overall: Nice Saison overall, which actually seems to have some Tripel traits. However, other than the strong, distinct hops, this is a relatively straightforward Saison that doesn't seem to deserve the expensive price tag. While I don't let price impact my score here, it will prevent repeat purchasing. (873 characters)

I will always jump on a new odell bomber, its always high quality and interesting, and this one is certainly that, although not as good as many other new saisons his season. it pours a remarkably light gold color, with an odd degree of clarity for the style. the head is bone white and full of big air pockets, decent retention. the looks throws me off, but the nose is better. its got a playful yeast, a floral hop profile, and some citrus elements. the malt is odd though, not the wheat I am used to, but something else that makes it sweet smelling and out of place. the flavor is also hindered by the malt profile, although everything else I smell comes through wonderfully in the flavor. the yeast is new to me, very very bright. the hops are grassy and only a little bitter. more hop than normal for the style, and I just love that in this beer. good bubbles, its carbonated like a soda, and the feel is lighter despite the malt sweetness. alcohol is hard to detect, and I found this to be very easy drinking. not my favorite saison, and definitely not my favorite odell brew, but a tasty offering I would be happy to drink again. I love the fact that some proceeds are donated as well to this little hop creature. good stuff. (1,231 characters)

750ml bottle into a tulip.
Appearance: A mesmerizing cloud of amber. I keep expecting to find a mosquito full of dinosaur DNA trapped somewhere inside. Highly effervescent, but seemingly unable to hold much of a head.
Smell: Freshly grated lemon pith and newly cut grass. Earthy and musty in the background.
Taste: Sharp clove with a touch of banana peal on the finish. Very dry. Some bitter citrus laced throughout. The nose is definitely more complex than the flavor.
Mouthfeel: There is an explosion of bubbles every time it hits my mouth. Dry and slightly astringent.
Overall: A nice saison that favors citrusy hops. I’d drink another one if it was put in front of me. (675 characters)

Review from notes taken at Odells on 7/3/13.

The beer served was a translucent amber/gold color. It was provided with about a finger and 1/2 of head over a bubbly body.

The nose started with wheat and light floral notes. I soon got a mild funk, light yeast and bananas.

The taste was mostly to the nose, but it had added dimensions. The taste was sweet and a good grassiness mixed in with the floral, funk and yeast.

This beer had a light-medium body. It dried my whole tongue out. (487 characters)

$13.99 for the caged and corked 750ml bottle.

A- huge pop when I removed the cork, it pours a clear bright gold with a 2 finger head of foam, and does well with the lacing.

S- it smells yeasty, spicy, has notes of citrus, maybe a bit of fruit like banana.

T- kind of on the peppery side with a hint of cloves, getting some flavour of banana, lemon zest, the malt is earthy...tastes good and all but maybe I should cooled it down more than I did.
Finish is on the dry side and fine with me.

M- on the light side of medium bodied, zesty level of carbonation, or is it? Kind of puzzling with the carbo; in the mouth it feels lively but in the swallow, it feels flatter.

O- a good Saison here but for the price, and even though I don't think there are other Saisons in town, I will probably not get another. It just doesn't work that well for ME. (848 characters)

Okay, gave this one a 2nd try and it was much better this go round so going tp re-review this one.

Pours a burnt golden with a big, prickly white head. Aroma is smooth, creamy and bright; nice spiciness from the yeast, lemongrass, melon, the esssence of some light banana sugars providing some sweetness, and a kiss of some hops. Flavor isn't quite as complex as the aroma but still really good; spicey, earthy a little lemongrass, melon, and a mildy bitter hop kick closing things out. A medium bodied, creamy mouthfeel, some activity but could be more. Overall, glad I gave this one a second shot because I definitely dug this one more the second go around. (661 characters)

Poured from 750 mL bottle into cervoise.
A: Pours a slightly hazed darker lemon yellow with moderate carbonation producing a 1-2 inch bubbly white head. Good retention.
S: Minerally farmhouse funk, citrus, white pepper, and hints of peach, floral notes, and honey.
T: Earthy, citrus hops; honeyed malt, white pepper, peach, and a hint farmhouse funk.
M: Brightly acidic and slightly sweet up front, turns toward a bit of a creamy feel, then finishes dry and bitter. Light-medium body.
D: A hop-forward saison...not quite my favorite, but this one is still well done. An interesting take on the style. A nice, refreshing summer brew. (632 characters)

Served in a Boulevard tulip glass.

Man, I was kinda hoping this beer was made butterflies... What does that say about me? Anyway, this stuff pours a partly-cloudy golden-brass topped by a finger if lightly off-white foam. The nose comprises damp wheat, light earthy greens, light clove, mild citrus zest, and a pinch of cardamom. The taste brings in more of the same, with an emphasis on the Belgian yeast spice. Things are earthy enough that I'd swear this stuff actually came from Belgium. The body is a light medium, with a light moderate carbonation and a dry finish. Overall, a pretty solid saison. No complaints. 'Nuff said. (631 characters)
