Enjoyed on tap at Beer Kitchen in Kansas City. Lucky me, as I haven't seen this one around. Maybe I'm not looking hard enough? Poured into a Belgian-style tulip glass.
Appearance - Body is a glowing, saturated orange hue, with some amber highlights where the light manages to penetrate. Of course, light penetration is not easy, given the massive three-finger head. The foam is bone white and pillowy, with uneven pocking as it slowly starts to dissipate, leaving a thick webbing of lacing along the sides of the glass. As I drink it down, it leaves significantly pronounced rings of foam sheets. A beautiful beer to be sure.
Smell - A blend of fruits, with both citrus and tropical profiles. Some faint lemon zest, mango and even a bit of pineapple to go along with a more bready base of yeasty phenols. I also can detect a substantial element of hop pungency (in a good way) and grassiness from the dry-hopping.
Taste - Here, the hop profiles go from supporting character to bonafide co-star to the wonderful Belgian yeast. Grassy, herbal, some faint pine compliment the mango and nectarine fruit profiles, as well as some spiciness from white pepper and clove. A fleeting sweetness is present, but that element gives way to a predominantly dry finish.
Mouthfeel - Medium bodied and with high levels of carbonation. Finish is clean and smooth making for a high level of drinkability.
Overall, this is a fantastic hoppy saison. I need to look more carefully to see if I can get it around here. If I didn't live in a market with a local, easy to get saison with good hop characteristics, this would be a regular go-to for me. I may have to get my ass down to Beer Kitchen again before it's gone.

12oz brown bottle with a freshness date.
Tastes like an American Saison, very well put together with all the right showings of a Saison but the hops are amped up a bit as well as the body.
LOOK: Hazed peachy orange hue, ample lacing and stickage on the glass.
SMELL: Citrus zest, peppercorn, faint clove, dried green plantains, doughy biscuits, kiss of esters, hop resin
TASTE: Deep smoothness, just enough crispness, leafy, hop oil, mild rind, dry graininess, faint banana pith, orangey, balanced hop bitterness, firm spiciness, yeast, drying grainy finish

Serving glass: Poured from bottle into Tulip.
Appearance: Very cloudy yellow-orange with white fluffy head and sticky lacing.
Smell: Lemon, banana bread, white pepper and some tropical notes.
Taste: Lemon and tropical notes come through fairly strongly on top of the banana, clove and bread notes that I expect. Definitely used more hops than typical here. The finish has clove, pepper and floral hops, although there is a lingering fruity sweetness that slightly detracts.
Feel: Body is a little fuller than expected and the carbonation is not quite as effervescent. Still a good mouthfeel, but not ideal for a Saison. Finish is mostly dry but there is a that sweet aftertaste.
Overall: While certainly not a traditional Saison, it is still a quite nice one. Odell did a slightly better job with Celastrina, but this is certainly priced better than that was.

12oz bottle. Best before 1/3/14.
Wellspring is a dry-hopped Saison and came as part of the fall montage mixed twelve-pack.
It has a hazy golden yellow color with white head that's thin and tight. It settles quickly and leaves a little spotty lacing behind.
Aroma is hoppy and fruity with lemony citrus and tropical fruits. The yeast comes through here to giving it a nice mild Saison funkiness.
The flavor is slightly more bitter than a traditional Saison with the big American hops coming on strong. The tropical fruit continues here with the addition of peaches and black pepper.
Mouthfeel is medium-light in body and nicely carbonated for the style. It's balanced and enjoyable.
Overall a really nice hoppy Saison. Just like it claims to be.

on-tap @ the brewery
served in the classic heavy odell stemware - preferred this dry hopped saison to the classic style saison that was also on tap. Lots of nice fresh citrus, nice hop bite, pepper, a little yeast, lemon peel. A nice beer to enjoy in the excruciating dessert that is north-central colorado.

12oz picked up at Brewforia Meridian a couple nights ago... Pours with a pillowy white head... the brew is hazy light orange.
Aromas are sorta all over the place... bubblegum esters.. along with a little clovey phenolic notes... plenty of fruitiness reminds me of underripe pears and throughout there is a good smack of grassy hoppiness.
Light banana sweetness ester... a bit of peppery essence... a sorta sharp pear note combines with the hops to allow for a long finish..
Body is a bit thicker than a standard saison.. and the carbonation tries to keep up but loses out IMO.
3.5 across the board.
