We scrapped all of the traditional recipes, drank a few beers, and completely lost ourselves in deep conversation about the perfect IPA - the one we could drink all the time. We stripped down our preconceived notions of how an IPA is typically crafted and instead built a recipe that would be the ultimate showcase of the most expressive hops available to brewers today. We were lost...and now we are in love.

Hazy orange-yellow color with a thin white head. Citrus aromas and flavors. Biscuit malt to balance it out. Smooth, clean mouthfeel makes for easy drinking. Overall, a pretty approachable IPA. I haven’t had Burley Oak beer in years, since I lived in MD, good to see they’re still around and doing well.

Here's another beer from the government economic small business bloodletting.

Pours a soapy yellowy beige color with 3/5" white head. The aroma has more coming from the Simcoe and Amarillo than it does Mosaic. Mosaic is largely lost here so I suspect it is in here in a massively minor way compared to the other hops. Bitter pine, grapefruit, citron.

Taste begins to push Simcoe to the 90% emphasis realm and the rest is to pick up the pieces. Bits of overripe pineapple begin to accompany the familiar pine, lemongrass and grapefruit tastes. Bitterness is in the 55 ibu range. Body is in between crisp and hazy, so its middle of the road malt content/weight and doesn't seem to have flaked wheat or oats. Alcohol is present but not excessive relative to its abv. It really seems to go middle of the road on every aspect except for it trending slightly higher abv wise for a single ipa.

I liked the beer, nothing too fancy, serviceable, but prolly won't pay shipping for this again.

On tap at Big Chill Beach Club, Bethany Beach, Delaware.

Pours an orange and beige color. A modest frothy head yields rings of lacing.

Fruity and citrusy hops aromas along with notes of resiny and semi dank herbal spices. Aromas of peach, apricot, pineapple, mango, grapefruit, orange and lime are contrasted with notes of pine, grass and floral hops.

Nice fruity hops flavors supported by a biscuity, cracker and honey malts backbone. Notes of pineapple, peach, grapefruit, orange and tangerine. An easy going herbal spice evokes notes of pine and grassy and a moderate resiny bitterness.

Medium bodied with a smooth and creamy mouthfeel. Finishes smoothly, dry and resiny. The carbonation is medium to gentle.

This is pretty good stuff. Nothing fancy or over the top but easy drinking and well balanced hops flavors. I would have again.
