We're told that the end is near and the 11th hour is upon us; but even the Mayan prophesy couldn't predict the hopquake beerageddon about to be unleashed from this bottle. 11% for 11 years of brewing; we're not planning for the end, we're just getting started.

Every 11 min hops are added to a 111 min boil for a total of 11 hops additions (plus dry hopping of course). Giant Mutant Pandas would want it this way.

Phillips Brewing "Pandamonium" The 11 hour anniversary ale @ 11% , from a 650 ml bottle poured into a large wine glass , now that the bottle is empty I can check out pretty cool looking label and see what beer journey is about to happen ,
A-pour is clear yellow/gold with a good sized off white head leaving some large spotty lacing along the glass edge
S-some serious hops here , citrus grapefruit , piney , cedar , floral , herbal , ? , ??
T-similar to an IPA with a serious kick , bitter with a bite , not unpleasant
MF-medium carbonation , full bodied
Ov-wow what a hop bomb , double wow I drank that fast , might be Mutant Giant Panda warnings I keep getting , interesting beer Matt

Bomber into a tulip.

A - Pours a relatively clean amber color, a touch brighter than your typical hop bomb, especially for a DIPA. Big fluffy head, off-white, that stubbornly clings to the glass relentlessly.

S - Basically your average Phillips IPA on steroids. Tropi-hop explosion upfront, with mango, pineapple, and some subdued grapefruit rind. Resinous piney quality is assertive but not overbearing. As with most hoppy Phillips brews, there's a certain sweetness to the aroma that I really love. It's floral and it's fruity, but it's also abrasive. A thin caramel malt adds just a touch of malty aromas to the equation, but does little to quell the pungent onslaught of hops.

T - As expected, the profile is an all out hop bomb. Resinous oily hops quickly fill the palate with bittering flavors of grapefruit, dank pine, and mango. There's still a floral, fruity quality to it, as well as a pronounced sweetness, in part from the malty backbone. Although I enjoy the intense flavors of DIPAs, I often find the overbearing combination of booze and hops to become a bit tedious. However, this remains very drinkable to me, and the profile doesn't become too abrasive for my palate.

M - Pretty full body, a little oily as well. Carbonation on the lower side, but just enough to give it some life. Slightly sticky on the lips, and also a little warming as it goes down.

D - A nice take on the DIPA by one of my favorite breweries. Definitely what I would expect from Phillips for the style as well. Glad I got to try this one while it was around, and I hope to see Phillips brewing great craft in Western Canada for years to come.

Props to joemcgrath27 for the hook-up on this brew...

A - Pours a slightly hazy pale golden colour, finger of head with solid retention and some sporadic lacing.

S - Scent is loaded with resiny pine hop notes, sour citrus and grapefruit with a hint of buttery caramel on the finish.

T - The sour citrus and grapefruit bitterness dominates, subtle orange rind and earthy pine. The buttery caramel comes through on the finish with a lingering citrus bitterness.

M - Medium, smooth and dry on the finish.

O - For 11% this stuff is incredibly well balanced, the booze is undetectable and the hop flavours provide a load of bitterness without being overly sour. A spectacular DIPA and certainly worth trying to seek out.

A - i must admit that this looks intimidating from the outside, upon cracking it poured a clear bright golden, thumb of head retained well with blobs of random lacing
S - the aroma is fairly mellow with graininess, some herbs and pine, and mild floral
T - the taste is much like the nose, pine and resin are the dominant hop flavours, there is a mild caramel to go with the grains, boozy sweetness, and a touch of metallic
M - light and easy, just enough heat to remind you its big but not enough to tell you 11%, pleasant bitterness, warm through the chest
O - definitely more sneaky and balanced than the in your face label suggests, dangerous stuff....

Appearance - Pours a hazy straw/amber with 2 finger widths of bubbly, foamy white head. Nice lacing left on the glass.

Smell - Earthy/piney hops, citrus/grapefruit, caramalts, tropical fruits. Very aromatic.

Taste - Hit right away with the earthy hops. Excellent citrus/tropical fruit character. Moderate and balanced bitterness.

Mouthfeel - Medium to full bodied with moderate carbonation. Creamy texture.

Overall - Great example of a DIPA by Phillips. Nicely hopped with citrus, tropical fruit and caramel flavours to boot. One of the best offerings I have had by this brewery. If you can find a bottle, pick one up. Great way to celebrate an anniversary - happy 11th anniversary, Phillips!

650ml bomber poured into tulip 19/9/12

A clear golden yellow liquid is a little lighter then I expected but whatever, a couple streams of bubbles feeding a large three finger foam that slowly falls leaving rings of lace with each sip. Even after the foams just a thin film it still leaves lots of lace deep down the glass

S big piney nose with heavy amounts of tangerine, grapefruit rind sweet orange. there's some toffees and booze but 11%? I'd guess 8...tops. lots of piney citrus and that's right up my alley, its so simple but somehow nearly perfect, loving the nose

T not as nice as the nose but still good, the booze comes out as dose the Phillips house flavor whatever it is, a little bready as it warms and still lots of pine and citrus

M a little thin all things considered but still has some body, a little heat and a little sticky, just a little slick

O overall I'm digging this one, fairly well hidden booze and quite well rounded, I could smell it all day and drink it for well... not all day because the booze detected or not is going straight to my brain

I'm thinking this one went down to fast, not sure if that's good or bad. I'm grooving on this one and its one of the better beers I've had for Phillips. Stereotypical big ass DIPA with the piney citrus and well concealed booze, perhaps too drinkable, oh well I'll enjoy the buzz

A: honey coloured amber liquid with a 1/4" cream coloured head.

S: Pine, leafy, earthy and grassy hops.

T: Juicy pine, grassy, earthy, leafy and grapefruit hops are predominant.

M: Dry, with a resinous thick viscosity and a high level of carbonation.

O: One of the best offerings by Phillips aside from their double barrel scotch ale.

650ml bottle - laser beams and crazy panda dreams, on a very subverted King Kong chooses Victoria (?) depiction. Oh, and 110 IBUs of hop goodness, evenly spread throughout the brewing process.

This beer pours a medium golden hue, with two brawny fingers of fine foam white head, which leaves a randomly amorphous spectrum of plastered lace around the glass as it evenly subsides.

It smells of big grapefruit and orange citrus rind, an underlying pine tip astringency, some hefty, bracing caramel malt, and a simmering metallic alcohol character. The taste is bitter, muddled citrus, caramel and toffee malt goodness, some viscous pine resin notes, and a well-behaved, though still still somewhat edgy boozy edginess.

The carbonation is fairly restrained, and resigned to supportive duty, the body a so-so medium weight, and smooth, but in that hop interloper way. It finishes sweet, bitter, in the fruity hops sense, natch, with a bridling heat, one which panders well to the anniversary nature of this offering.

A decent big-ass DIPA, somewhat too pale, though only in appearance, and tasty throughout, until the booze hammer drops, thankfully right at the very end of this strangely too-small bomber.
