8 oz. pour is a dark brown color with red highlights and a one-finger tan head. The head dissipates quickly into a wispy layer of bubbles on top and a thin ring around the glass. There's not much lacing.

Smells strongly of whiskey. There are also some earthy and smoky aromas that come out a bit more as the beer warms.

Tastes very strongly of whiskey as well. That flavor is joined by sweet caramel malt flavors up front and finishes with a mild smoky bitterness. The whiskey flavor sticks around for a while.

Mouthfeel is alright. It's thinner than the normal version, and the carbonation is a bit stronger. It still goes down smoothly.

Drinkability is good. I'm a fan of whiskey, but beware if you're not...then again you probably wouldn't order this if that were the case. It honestly isn't a far cry from a whiskey and Coke - there's more complexity and the mouthfeel isn't quite as carbonated, but if I had to explain this beer to myself a few years ago that's the analogy I'd use.

Of all the barrel-aged beers that I've had this certainly retained the most characteristics of the barrel. Definitely give this one a shot if you have the chance.

Big bourbon aroma, and big bourbon taste, enjoyed at Coles rare beer fest. Peaty carmel malty sweetness,some chocolate malts, drinkability.Medium mouthfeel, above average carbonation (I know its a cask). Other casks of Oskar had more complexity. It works.

Shared by cmrillo during BRoss242’s send-off party before he moves! Will miss you man! Served from bottle into a Mikkeller taster flute. Poured dark brown with a half finger off-white head that subsided to a minimal amount quickly. Maintained decent lacing throughout the glass. The aroma was comprised of sweet malt, caramel, wood, vanilla, and tart cherry. The flavor was of sweet malt, caramel, wood, vanilla, and sweet alcohol. It had a light feel on the palate with medium-high carbonation. Overall this was a good brew. The notes of bourbon on this one have really stuck around quite nicely and added a really nice level of complexity to an already solid brew. The vanilla kiss from this one definitely took the base brew to a new level and really kept me guessing on what I would pick up on next. The tart cherry was a little bit of a surprise if I am honest, but it did work quite well with everything else going on here. A definite must try if you have not done so before regardless of how you have to go about doing so.

On tap at the Basin Pub in Bushnell's Basin, NY.

Pours a dark caramel brown, with no head or lacing.

Smells like bourbon, peat smoke, caramel, toffee, chocolate, and coconut.

This one tastes great. I get a ton of vanilla and coconut from the barrel, on top of smooth, well folded-in bourbon, some chocolate, peat smoke flavor, caramel, toffee, brown sugar, and the slightest booze burn.

Other than the slightest boozy burn, this one goes down so easily, really drinkable. Low carbonation. Medium bodied, fairly rich.

This was awesome. It's incredible that the Basin Pub got a keg of this stuff.

The pour was very big with a rich dark brown color coming forward right away. Nearly opaque with a small head of tan creeping up the sides throughout the session but eventually falling back down to earth. The aroma was wonderful with rich caramel and toffee notes that just exploded in the air. Hints of apricot and other light fruits bouncing around as well. Really the best flavor I could have imagined coming out of this one. Rich caramel and toffee flavors, hints of vanilla, pears and light tart flavors bouncing aorund. No alcohol at all, there is just no way this thing is twelve percent, it does not drink anywhere near this kind of strentght. Smooth, perfect carbonation with a drinkability that was off the charts. I just dont know what else I can say about this beer.

sampled on tap at the coles rare beer festival, jan 24/09.

pours super dark red. it looks brown at first, but when held to the light you can see it is crystal clear and has a beautiful deep garnet hue. no head.

aroma is great. vanilla and oak. big fruity component. light bourbon notes. hints of coffee and cocoa. bit of alcohol. biscuit and wheat bread.

taste is excellent. big blast of oak and vanilla that turns quickly to bourbon and fades to show more of the chub beneath. biscuit. lightly toasted wheat bread. cracker. nice bit of caramel and toffee in the background. very faint fruity component too. a bit earthy. low bitterness level.

mouthfeel is great. low carbonation level, but that seems to work well. just over medium body. silky smooth.

drinkability is great. well balanced. nice level of barrel character that matches well with the base beer without overpowering it. great stuff.

A - Dark brown beer with some red hues. Little bit of tan head that doesn't stay around for long. Little bit of stick on the sides.

S - Caramel, vanilla, bourbon, brown sugar, with a little bit of butter. Smells very nice, like it's got a lot going for it.

T - Taste falls a little flat compared to the nose, like there's something missing. There's toffee, some bourbon, little licorice, some butter. There's a bit of emptiness in the flavor, something is lacking.

M - A bit over-carbonated, close to full bodied. The carbonation is prickly, takes away from the taste even more.

O - Not a great beer, what was going so well on the nose just didn't translate into the taste. Won't likely drink this again unless I hear it's better.

On tap at Time Whiskey Bar in Philly on 7/31/12. Served in a tulip.
Aged in Wild Turkey barrels for this batch.

Pour: Dark brown, almost black, with deep mahogany edges. Just over a finger of tan head that recedes quickly.

Smell: Bourbon vanilla and burnt brown sugar. Some leather comes out as it warms as well.

Taste: Bourbon up front with vanilla, caramel, TONS of toffee, and some brown sugar sweetness. Flavors pretty much stay consistent as it warms.

Mouthfeel: Definitely an alcohol heat, but not overpowering. Body is fairly light otherwise. Alcohol heat gets more noticeable as the glass warms unfortunately.

Overall: Really solid BB wee heavy, though not quite as good as Backwoods Bastard. Was happy to enjoy this thought, and would get again for sure!

From elsewhere :"Oskar Blues "Chubourbon" (barrel-aged Old Chub) - Just like it sounds. They take Old Chub and put it in a wet bourbon cask for 6 months."

A: Looks deep dark brown with ruby highlights. Thin brown head with nice lace

S: Bourbon, oak and vanilla up front with dark sugar and figs on following through

T: Full bodied with a healthy dose of oak, bourbon, brown sugar, molasses and alcohol. Finish is neither sweet nor too dry.

M: Full body with low carbonation to go with the flavors

D: I'd drink it again in a heartbeat.

Pours a clear dark reddish brown, very nice colour in the light, no head forms, no lacing, pours almost flat. Smell is really nice, bourbon and oak, vanilla, alcohol, toffee, rich and malty aroma, sweet whiskey - SoCo like aroma in a good way, fruity, more bourbon, pretty nice. Taste is similar, lots of vanilla and oak, bourbon, sweet brown sugary middle, apples, caramel, more vanilla, very raw bourbon flavour but well integrated, toasty malts, big beer but very nice. Mouthfeel is medium bodied with low carbonation, some warmth, very nice. Bourbon worked really well with this one, nice complexities and very drinkable.
