Sitting on a deck over water and eating fresh seafood is a special privilege of being from the Jersey Shore. Doing exactly that at Moby's in Highlands one sunny day, The Wit Whale occurred to us. Having grown up alongside schnitzel, we knew that the esters of classic wit yeast would associate well with the crunch of fisherman's platters while a drinkable malt bill of 50% wheat and 50% Pilsner would accompany the sweetness of fish themselves. We relied on the mineral profile of our water dressed up with lemony Sorachi Ace and grassy Summer hops to play with the richness of shellfish. Drink The Wit Whale because you have a basket of fish in front of you and you can see the water where it was caught.

A: The beer is a little hazy yellow in color and has a moderate amount of visible carbonation. It poured with a half finger high white head that left a large patch of bubbles on the surface, a narrow collar around the edge, and some lacing down the sides of the glass.
S: Moderate aromas of lemongrass are present in the nose.
T: Like the smell, the taste has lots of flavors of lemony hops along with hints of herbs.
M: It feels light- to medium-bodied on the palate with a moderate amount of carbonation.
O: I really enjoyed the lemongrass-like aromas and flavors from the combination of the Sorachi Ace and Summer hops.

Pours a hazy opaque lemon yellow,with a soft pillow like head. Smells like lemon Italian ice, citrus pith. Tastes like lemon sorbet loaded with spicy hops. Feels clean,crisp,refreshing. I can see how this would work with fried fish, the lemon taste washes away the oily batter. Overall a really good wheat beer.

On tap at brewery:
Full pour didn’t leave room for much head, but the thin yet complete surface coverage yields a full sheet of lace early on.

Nose and taste are a nice mix of the wheat and Sorachi Ace. The grassy aromas of the hops join the grains to give an open farm meadow impression. The lemon and herbal dill notes in the taste evoke a dinner bread.

I’m a bit of a sucker for Sorachi Ace done well, and this beer fits that description to me. That said, it also strays from a traditional Belgian wit a bit more than others might like.

Very refreshing, not getting the wit taste or belgian yeast, but hoppy, citrusy and dry finish. great beer

Freshly canned. Poured into Carton teku glass. It pours a hazy golden-orange color with a full finger of frothy, bright white head and lacing. It smells of orange peel, clove, banana, and yeast. It smells a lot like a Saison. The initial taste is a sweet cracker, followed by subtle orange, lemon peel, and dry, crisp wheat and pilsner malt, and grass. It finishes with moderate hoppy bitterness. This is as crisp and refreshing a beer as you'll find. It's light, pleasantly carbonated, and very easy to drink with a modest 5.9% ABV. I agree with the narrative on the can that this beer would pair extremely well with seafood. It's nicely conceived and well-crafted, as you would expect from Carton.
