Southwest style- not the perfect authentic taco, rather existing dishes enhanced and tailored through the use of Southwestern flavors. Adjunction to augment and layer flavors rather than to flatten is the goal. Blue Agave nectar is added to a two-row pilsner malt bill and fermented with Cal Lager yeast, establishing a core palate of flint and gunpowder with edges lightly dressed with papaya and lime leaf notes. That combination then balanced by additions of Noble hops creating a lager counterpoint for a well crafted Southwestern meal. Drink Carton Canyon because there is no art in a beer that stays out of the way of your food.

16oz canned on 07/30/2020. Sample from the brewery.
Pale golden with a touch of haze and a thin, tight, creamy lace. Soft floral, citrus rind, and cereal grains in the nose. First sip and "tequila" immediately comes to mind thanks to the addition of blue agave nectar. That's the best way to try and describe the unique flavor profile going on here. Super creamy on the palate, light, and insanely refreshing. Bright, floral, lime zest backed by earthy, bready, and dark honey-like suggestions. A bit sweet, but not cloying. Interesting "starchy" note. Peppery finish. Lots of agave in the linger.
This is one of the best uses of agave that I've ever tasted in a beer. If you love tequila and lagers, you're going to love Carton Canyon.

On tap at Carton. 1124/17.
Golden and clear. Clean notes of pilsner and yeast with slight citrus and slight sweetness. The agave nectar definitely adds something to the experience. Taste largely follows nose. Extremely drinkable, nice and crisp. Surprised they've not canned it.

I had this on draught at the brewery. It pours a hazy golden-straw color with a thin, egg shell colored head and lacing. There wasn't much of a smell: biscuit, faint lemon peel, and floral hops. The taste is mostly biscuit and hops but there is a noticeable sweetness from the agave nectar. The hop profile is much stronger, and the 6.4% ABV is higher, than in mass-produced AAL's. It is dry, crisp, and refreshing. Canyon is tastier than your average AAL but give me Boat or an O'Dub any day of the week.

I had this one on tap at 'Gas Light,' in Atlantic Highlands. Very floral, fruity, with a little lager-y graininess as well. Very pleasant to drink with a meal. In my opinion, one can really taste the agave nectar in the recipe and it's a nice addition. Would order again, especially for different food pairings.
