Was more than pleased to see this oyster stout on the draught list at the beautiful and memorable Against The Grain Brewery in downtown Louisville, KY.
Complexion is deep black. Slight ruby highlights. Did I say it's impenetrably black?
Aroma slightly salty or briny, with some roasty chocolate notes in there, somewhere. Nice start.
Tastes roasty, smooth, with hints of coffee and a very subtle brininess that, if you weren't looking for it, may not be vey detectable. This is a solid stout, very tasty and easy to drink.

Originally brewed for the calcium-rich shells, which would add health to yeast and a snappy mineral taste to offset sweetness- the notion of "oyster" and stout has a long lineage. One that is in stark contrast to this "Shuck on the First Date" mindset. Slow down boys and enjoy the ride!
Its full and lush taste captivates the nose and early palate with burnt toffee, coffee roast, bitter chocolate and charred toast. Its burnt sweetness is creamy and expansive to the palate.
As the dark brown and garnet ale develops across the palate, the taste trends toward dry roast with campfire aspirations. Nutty, chicory, mocha-like and with a tinge of grilled berry- more earthen complexities lurk in the background. Seared malted milk leaves behind the bulk of its sweetness and props up the roast to near perfection.
Its iron-clad finish is snappy and plaster-like. Dry on the late palate, its arid roast, high mineral, assertive carbonation and hop dryness simply won't give the malt a chance. Echoes of light smoky chocolate return as the palate recovers from its flinty-like finish.
Even with its oat additions, this "American" stout prefers dry effervescent that enlivens the roast and calcium-forward taste. Its the perfect roasty accompaniment to many of Against the Grain's smoky dishes but dry enough to erase those rich and fatty flavors as well.
