Collaboration with Fountainhead Brewing (Missouri) and The Aviary
One of our latest collaboration projects with Chicago IL’s finest. World renowned cocktail kitchen, The Aviary and Chicago hot spot Fountainhead, sent their finest artisans down to join us in crafting this unique take on a classic style Gose. Resulting was a roasted red pepper, cilantro, and calamansi lime infused Gose bier.

From a bottle, this brew is cmostly clear and yellow, without much of a head. The nose has a tart sharpness that leads you to think it will be very sour. There is plenty of fruit and funk in the smell as well. The taste is more balanced than I expected, with enough sourness to keep it interesting and refreshing. Medium body. I didn’t the the salty fullness of a normal guse, but it is still quite interesting.

"We had no idea what would happen when we invited Cleetus Friedman (Fountainhead) and Micah Melton (The Aviary) down for a beer. Turns out THIS happened. A ratchet gose featuring the freshness of cilantro and roasted red pepper, balanced with the co-mingling tartness of calamansi limes and sea salt." Brewed in the style of a Gose beer, available in 500ml. bottles and on limited draft. Collaboration between Against the Grain, Fountainhead and The Aviary.

(Appearance) Pours a crisp, fizzy head of a pastel white over a lighly hazy golden amber body with moderate, lively carbonation. Retention is poor and there is no visible lacing. 2.5
(Smell) The aromas of roasted pepper and soapy cilantro come through most strikingly up front, followed by the drying twang of abundant sea salt , sweet lime and mild bite of coriander. The adjuncts in this one truly distract the nose and there's no denying this isn't remotely close to true to the style, but it's interesting to say in the least, a bit aromatically sharp on the roasted pepper and cilantro aroma, but to be expected. Potency is moderate/high. 3.5
(Taste) The flavor largely follows the aroma, with leading roasted pepper and soapy cilantro flavors yielding slightly to the soft acidity and sharpness from a moderately salted and spiced finish. It's really busy and neither the cilantro nor red pepper feel like complimentary flavors in this beer, really sharp and distracting, not allowing for much subtlety in the malt, salt or acidic adjuncts to shine. 3.25
(Mouthfeel) Texture is smooth, slick, lightly chewy, medium dry. Carbonation is modest, generating a medium frothiness and a mildly crisp finish. Body is medium+ for the style, shy of medium overall. Balance is peppery, herbal and roasty over sweet and acidic. Alcohol presence is light and there are no off characters. 3.5
(Overall) This is truly what I think of in a kitchen sink recipe that is almost guaranteed to be a mess. Cilantro may be my favorite ingredient ever added to food in human history, but really clashes strongly with the subtleties of this beer, and doesn't contribute the positive, citrusy and bright attributes that I think of in cilantro going in. The cilantro with the roasted red pepper flavor dominated this beer's flavor, with my most curious addition, the calamansi fruit fading into obscurity. It's pretty messy, but I didn't expect much better going in. This is certainly something interesting, I'll give it that. 3.25

A: The beer is clear yellow in color and has a moderate to high amount of visible carbonation. It poured with a a finger high bright white head that died down but consistently left a thin head covering the surface.
S: Faint aromas of red peppers are present in the nose along with some hints of sour citrus.
T: The taste starts off with some sour flavors of limes and finishes with notes of red peppers, which seem more like deseeded chili peppers.
M: It feels a bit more than light-bodied on the palate and has a moderate amount of visible carbonation.
O: The taste of this beer is very interesting as it starts off like a gose but almost finishes like a chili beer. It is very unique.

Interesting pepper flavor to this. Good, but not sure that it would be great for an outdoor summer beer.

This is a beer that hides nothing about what it is. If you read the label, you're getting most of what you need to know about how it tastes and smells. If you want the beer equivalent of an appetizer at a vegetarian garden party, look no further.
The salty roasted red pepper come out especially strong in this beet, but the other ingredients certainly make themselves known. There is a slightly puckering feel on the sides of the tongue in the finish which stays for a while, and make this a perfect beer to pair with a sausage or pasta salad. Actually, I'm kinda annoyed I didn't know that before or I would have prepared something.
Honestly, this isn't a beer to drink on a quiet afternoon or at a bar with friends. It's a beer to be paired with a nice savory meal and enjoyed for the peculiarity of itself.
