Finding new zymological expressions is a noble dedication of the craft beer enthusiast. For those committed to the adventure of seeking new styles, beer destinations and breweries, we applaud you and dedicate this golden Belgian-style trippel ale.

This smooth and alluring Belgian golden ale is full of complex fruity pineapple flavors set against a spicy finish. Dried jasmine flowers added in the boil work with a higher alcohol level to augment Belgian pilsen, caramel and honey malts. Hop character is distinctly Chinook with an aromatic peppery finish that comes from Motueka hops grown in New Zealand.

Poured from 12oz bottle into a tulip.

Appearance: murky medium brown-orange hue with a thin layer of ivory foam. A bit dark for a tripel and the thin head disappeared quite quickly. The appearance could use a little work.

Smell: the aroma is pretty light. It has a fair bit of sweetness and fruitiness, including an apple/pear character that I like. Not too bad.

Taste: nicely malty with plenty of orchardy character. There's a sweetness up front that threatens to become cloying but then is cut off with that hint of tartness -- yes, there is a bit of pineapple character here. It's not bad at all. After a few sips some alcohol heat starts to develop; this isn't entirely bad.

Mouthfeel: medium body with a decent carbonation and creaminess for the style.

Overall: I really like the fruitiness of this beer, but its aroma is a bit weak and its look leaves a lot to be desired. I'd love to try a slightly more refined version of this recipe.

Slightly cloudy with a neutral amber color. Little head and nearly no lace.

Rich, alcohol laden aroma. Lots of fermented malt.

Definite Barley Wine properties but I don't detect any Belgian yeast flavors for a true Trippel. The body is predictable and the carbonation low.
