Notes/Commercial Description:
The most powerful IPA in the Due South Category series, the Cat 5 is big on hops and big on flavor. Clocking in at 8.5% ABV and 96 IBU’s, the first bands of malts will make way for the surge of hops on the palate. Designed for the true hophead, this is not a beer for the faint of heart.

12 oz can poured into snifter. Pours a hazy darker gold with generous and creamy white head and great retention. Heavy lacing left behind. The smell pretty heavy on malts with caramel evident among grassy and earthy hop profile. The hops have moderate strength. The taste is a bit sweet with heavy malt presence again. The hops have smooth and mild bitterness. The finish is a touch on the sweet side. Mouthfeel is heavy for style and moderately carbonated. Overall, not my favorite IPA. The hops and malts don't strike a great balance and this is just too sweet for the style.

Received as an extra in a trade and poured into my Duvel tulip.

A - Pours a hazy orange hue with a one finger head that fades rather quickly to leave a thin thin blanket and no real lacing.

S - Aromas of faint tropical notes along with floral notes. Fair amount of sweet malt too though.

T - Taste is not bad, just, again maltier than I like. More of the nice tropical notes, pineapple and grapefruit, however, even strong caramel malts. Powerful bitter finish is nice. Alcohol is relatively noticeable too.

M - Mouthfeel is decently carbonated, but, relatively boozy. Nice strong bitterness. Just...I'm used to 8%+ IPAs to still be crushable, instead this one is more of a sipper.

O - Overall, maybe I'm spoiled but yeah, in the world of hoppy beers this one simply does not stand out of the pack.

12oz can of unclear dating, poured into an unlabeled snifter today, 5/17/2014.

A- Slightly hazy orange-amber body. Two finger effervescent white head, good retention- drops into a thick film that sticks around for a while. Sticky lacing.

S- Pineapple, floral hops, toffee, biscuits. Yeast spices. Malt backbone is quite strong here as this smells particularly sweet despite the strong hop presence.

F- Pine, citrus, floral hops are strong here, with an even stronger toffee and caramel malt backbone that helps cut the hop sweetness quite a bit. the combination isn't the best, but it's certainly not bad at all.

M- Medium body that's on the verge of syrupy, good carbonation, with a bitter floral finish that is especially strong but not unexpected given the amount of hops that show up at the beginning. Slight booziness, which is a bit surprising.

O- Solid DIPA, nothing special or mindblowing but well-constructed and balanced. There isn't a ton of oomph behind the flavour profile which seems a bit muddled.
