served at 2012 BCTC, review from mental notes taken that evening.
The beer pours a light yellow with a foamy white head. The chamomile leaves quite an impression in the beer's nose, although i'm not detecting a distinct honey aroma. The taste was far more bitter than expected, which I am attributing to the chamomile (because a belgian wit isn't a traditionally hoppy style of beer). Overall, I enjoyed this beer for it's innovation and use of local ingredients, but it could use a little more refinement in it's mouthfeel and flavor profile.
