Paradisaea is an orange-hued 6.5% saison brewed with four varieties of citrus and lightly dry hopped with Mosaic. It was then aged in wine barrels with our house microflora. The result is fruity, funky, tropical and delicious.

A: Completely clear. Yellowish
S: Musty sweetness. Lemony.
T: Lemon tartness, but just slightly.
F: Crisp and drinkable.
O: Very nice. Delicious in a subtle way.

Appearance: Pours a mildly hazy golden color. The head is amazing, with over three fingers of height and a white shade. It's extremely fluffy, with excellent retention for the style. Streaks of lacing also stick to the glass.
Smell: Gloriously brett-laden, this also features an augmenting tartness to go along with the earthy funk. Another element displaying itself is the wine barrel, providing gentle notes of white grape and buttery oak. Some of the Mosaic hops are still fluttering around with a bit of grapefruit peel and dank onion. As it opens up, I get more brett funk. The aroma is very well integrated and complex, enough said.
Taste: It starts with a nice citrus character on the palate. At first, the second half and finish of this beer seems a bit...empty. It takes a few sips for the brett funk and oaky notes to appear properly, but they do. The gentle tartness becomes a little bolder tasting after a while. It starts off a little weaksauce - and yet, the more I drink it, the better (and bolder) it gets. Sold!
Mouthfeel: Light, light, light. This beer evaporates off of the palate exactly like a good saison should, without relying on overdone carbonation. The oak tannins really help dry this out, that's for sure. Drinkability is top-notch.
Overall: When I inhaled this brew, I thought this would kick ass. When I first sipped it, I was let down. Now that I'm at the end of the bottle, I'm back to thinking it kicks ass. This one has clearly aged beautifully, and also shows me Forest & Main know their way around a saison.

Golden hue with a nice tight head that lingers. Pineapple and herbaceous, almost an agave / tequila note to me, great amount of "buttery" oak from the wine barrels. Modest bitter finish with some musty closet funk. F&M's saison game is on.
