I bought this a few months back at the brewery but busted it out last weekend for a bottle share. Here are some notes I jotted down on it:
APPEARANCE: Very dark brown, almost to the point of black (go figure, it's an imperial stout). Minimal, dark mocha head.
AROMA: Obviously sweet, with bourbon, oak, and dark malts. Also tons of chocolate - chocolate pudding, baker's chocolate, milk chocolate - as well as bananas.
TASTE: First the chocolate. It's reminiscent of chocolate pudding at first, then tapers off to a bittersweet chocolate. Sweet, dark malts give it some more body, and the trademark bourbon, vanilla, and oak come out. That little bit of banana from the nose sticks around in the taste and makes me think of a banana cream pie.
MOUTHFEEL: Smooth and creamy, thick and warming. Very heavy finish, though not very much alcohol.
OVERALL: This was my favorite stout of a weekend that included the much circle-jerked over BCBS among others. I thought the chocolate came through great, but it wasn't overpowering, like drinking chocolate syrup. It was well-balanced with the malt and the moderate bourbon character. These big, syrupy, boozy stouts are boring and tough to drink. Silva Stout felt light enough to not want to kill yourself after drinking.
