A: Black with a large khaki head. Good retention and decent lacing.

S: Pepper, caramel, and some roasted malt. Brown sugar and some dark chocolate. Some spice and herbal and spice smell that's difficult for me to describe. A bit of mint, maybe some clove. Fun to smell.

T: Nice dose of bitter roasted malt upfront. Herbal and spice profile come in a bit bitter. Clove, pepper, a bit of allspice, and others that I can't really discern. Finishes with a bit of roasted coffee and roasted malt bitterness.

M: Smooth, silky, and medium-full body. Carbonation is medium. A bit wet.

O: This was my first saison and it left me a bit confused. Nothing off-putting about the flavors or smell but was a weird/interesting experience overall.

12 ouncer, "Bottled on 7/31/12"

Pours black, under a HUGE very dark tan head, that stays and stays, it goes all rocky, frothy and leaves off the chart amounts of thick and very sticky and high lacing. Unusually awesome looking brew.

Floral and perfumed nose, with waves of roasted malts in the rear.

More dark malts, some perfumed interest, but the taste is a bit disappointing after appreciating the stunning look and smell of this collaboration. A bit thin in the mouth, and lacking the complexity teased by the sniff.

Unusual and intriguing, well worth a try but ultimately not quite living up to the potential heralded by the initial look and smell of this interesting beer.

A -It's very dark with a VERY thick head that is easily 3-4 fingers.

S - A very flat cola smell with a tiny bit of spice.

T - Horrible, this is the first beer I had to pour out it was that bad! I'm really surprised since this brewery makes amazing beer. It has a strange minty/super flat cola taste...it's a bit strange to describe.

M - has a light feel to it

O - I bought this beer twice to make sure I didn't pour it wrong to get the insane head on it or the horrible taste. I do not like this beer at all!

12 oz. bottle at fridge temp. Poured into a snifter. Bottled on 7/31/12.

Pours out pretty much opaque black with a huge, billowy tan colored head. Some really nice lacing and amazing, rocky head retention. Looks great! Very stout like.

Interesting aroma. Floral smelling, reminiscent of roses, with a big scent of smarties candy. A bit of spice. Also some tart aromas which make me think a little bit of Brett is at play.

Follows the aroma, very floral, smarties candy, sweet tarts, some overall tartness. A bit of pepper and hop bitterness in the finish. Hints of spice. Some roasted grain as it warms, expected a lot more just based on the color.

Very light feel, carbonation is up there. Just a touch watery. Becomes creamier as it warms.

Not too bad, a little off at first but it grows on you the more you drink it. Very Saigon like.

Bottle (2012)

Thanks for pre-release opening this with me, Josh!

Very dark brown in color with a quickly-forming, persistent dark brown head, which eventually leaves messy webs and irregular bubbles and lines of lace down the glass. Very pretty and an unusual style.

Very herbaceous aroma, perhaps sage or rosemary even. There's some black pepper notes along with roast and a mild yeast character as well. A lot going on, though I'm not sure it comes together particularly well.

The flavor suffers a similar fate as the aroma; there's simply too much going on, and none of it working in concert. It's a roasty, yeasty, herb garden of a beer, without much nuance or drinkability.

Medium bodied with high carbonation.

Perhaps some time will help this one, but I don't have high hopes. Yet again, an interesting idea does not necessarily translate into a tasty beer.

12 oz bottle dated July 2012 served in a Unibroue snifter.

Pours very dark brown; black in the snifter; capped with a large, dense beige head, with loads of lace left on the glass. The aroma features fairly strong notes of perfume in a floral and spruce mix with traces of spices and yeast. The remarkable aroma is complex and unusual, but is not really inviting ingestion.

The flavor starts sweet, as suggested by the aroma, but soon turns bitter. The flavor has some malty underpinnings of a black ale, but this is overrun by brett/perfume/spruce resin. Hints of bitter cocoa, coffee, ginger and rose petals.

Medium body and carbonation.

O: this intense brew is the most floral and perfumed beer I've ever encountered. I found it quite interesting, but rather hard to rate and challenging to consume. It is not one I'll return to.

Having reviewed this on tap, I realized I have a bottle in the fridge. There's not much difference, but it's noted where there is.

The look is pretty much the same out of the bottle as I saw from the tap. It is, again, as black as a "black saison" could be, and crowned by a thick, fat tan head 1 1/2 to 2 fingers high and sturdy. It drops strong, creamy lacing on the glass as the beer recedes.
Nothing changes in the smell or taste; stillthe strongest smell I get is mint basil. It seems to be a mix of the minty character of the hops and the strong herbal notes. It's also floral and piney. I don't quite get the balance from malts that I get in the flavor which, again, strongly reminds me most of mint basil but lets things play together as more floral (almost perfume-like), toast, pine, and a touch of roasty sweet notes come into play. There's no question the not-quite-funky but herbal and earthy characters of a saison are here, with a bit more in play.
The feel is where this beer deviates just a little. It's still got a medium body,but as the dryness pulls out more, it still has crispness but loses a bit of the smoothness. Carbonation still brings out a little of that creaminess, but it fades off. As it dries out, I get slightly more of a chalkiness in the dry finish.

Ok, every once in a while you come across a beer that does not sit well with you. I am not saying that this beer is bad, but it just wasnt for me.

The pour was ok, semi- dark, but thats it. I couldn't pick up any aromas, hops or anything.
The taste was overwhelming. To me, I was hit with so many different spices and flavors that I couldn't enjoy any of them.

The aftertaste left something bitter for me. Almost to the point, I felt the after taste was skunked.

We cant like every beer we taste!

A - blackish brown with a huge brown, foamy, dense head that has great retention

S - anise, roasted malts, sage

T - anise, citrus, sage, bitter finish, some other spices that I can't put my finger on

M - medium to full bodied, well carbonated

This doesn't resemble a traditional saison, but it's unique and tasty. I'm a huge fan of the herbal notes. I wouldn't have expected these flavors to have all worked together so well. This isn't my favorite "saison", but I give it bonus points for uniqueness. It's definitely worth a try especially if you're a fan of herbs in beer.
