only my second beer from high hops, but an extremely impressive one. a bigger ipa, not quite imperial i dont reckon, but somewhere in the middle. normal appearance, honey colored with a slight chill haze and a slowly fading white lace head. nose and taste are similar, both dominated by big west coast style hopping, not as resinous and sappy as others, but getting there. there is an awesome cleanness to the finish though, where bitterness would be, there is a very pleasing citrus character arises. what i like the most is the flavor/feel transition here. i taste what i think has to be dextrose, a clean fermenting but not quite done sweetness of powdered corn sugar, not something i usually dig, but with the hops it sort of melts into a candied hoppy finish that feels gentle and prickly on the tongue, and balances the beer out beautifully without a huge heaping dose of malt heft and flavor. i like it a lot, found it real drinkable for a big ipa, and look forward to more beers from these guys, i have been really impressed with both i have had from them so far. this one is a little different, but worth seeking out.

Dark orangey amber color with a fine, big foam in the Caution Brewing nonic. Aromas of honeysuckle and pine. Sudsy and long-lasting foam that clings to the glass. Quite light in body for a DIPA.

Flavors of dark toast and grilled papaya. Sharp mouthfeel and on the acidic side. Big alcohol taste. Fairly dry, though there is a lot of light malt that doesn't add a lot of flavor. Sort of burnt tasting, like burnt sugar that has dried out. Woody and seriously bitter. Resiny and very piney.

A powerful jet fuel brew that doesn't disappoint in the hop department. From the 22 oz bottle purchased at the tasting room on the highway west of Windsor.

22 oz bottle. Pours clear ruby amber with a big creamy off white head that retains well and laces the glass.

The aroma is sugary melons, caramel malts and some piney hops.

The flavor is sweet sugary caramel malts, and melons with a good bitterness in the finish. It has some odd notes in the flavor though - green caramel apple. The mouthfeel is medium to full bodied with smooth carbonation.

Overall, a decent sweet sugary DIPA with caramel green apple.

Sampled at location and growler to take home. Pours a darker red color with amber hues throughout. A soft white head with ok retention. Semi cloudy.

The nose is more balanced from a DIPA. Closer to a East Coast IPA. The hops come out nicely with a herbal and floral nose. Some citrus, grapefruit notes as well. The malt come out with a soft caramel and bready note. Some yeasty undertones and a hint of diacteyl.

The taste is a bit more on par for a DIPA. The hops come out more vs the nose. A good citrus and herbal hop note. Some bitterness but not balanced to the finishing hops. The malt backs up the hops well with some caramel and a hint of roast (or an astringent malt. Either that or over sparged). Yeasty as well and some light off notes. Hints of diacteyl linger but just could be me.

The body is moderate to moderate full. A bit astringent as mentioned before but more of a malt astringent quality. Some chalky notes in the finish, but a nice lingering hop flavor stays with the palate. Overall a decent DIPA but some minor issues.
