750 mL corked and caged bottle. date of 6/13/2013, Batch 006. So a little more than a year old.
pours a clear golden cooper color, until the last pour with the yeast that's a bit cloudy. foamy bright white head, but it fades quickly. way too light in color for a dubbel. smell has a bit of that belgian yeasty funk, but not the complex malt that is expected of the style. same with the taste. just a bit of biscuit, underwhelming. mouthfeel isn't bad, a little bit of thickness, lower carbonation, coats the mouth.
overall - for the high price - just doesn't hit the mark for a dubbel.

1 pint 9.4 fl oz brown glass bottle with hood-and-wire cap (aka cage) over a cork acquired earlier today at the Hancock Center HEB Grocery and served into an Independence Brewing pilsner glass in me gaff in low altitude Austin, Texas. Reviewed live. Expectations are above average; I'm really in the mood for a good dubbel and I remember Adelbert's saison being pretty decent. "Bottle-Conditioned." Reviewed as a dubbel because it identifies as such on the label. 7.2% ABV confirmed. "Serve at 55-60 degrees." Batch No 006. Bottled 06/13/13.
Served chilled, not cold, and allowed to warm over the course of consumption. Side-poured with standard vigor as no carbonation issues are anticipated.
The cork popped off easily by hand, yielding a satisfying pop. No beer surged out; carbonation seems adequate but not overdone.
A: No bubble show forms as I pour.
Pours a two finger wide head of white colour. Disappointingly thin. No creaminess at all. Not frothy either. No lacing clings to the sides of the glass as the head recedes. Head retention is decent - about 3+ minutes.
Body colour is a hazy copper of above average vibrance. No yeast particles are visible. Quite light for a dubbel. Nontransparent. Translucent.
Atypical of the dubbel style. I'm a bit concerned, but it looks appealing in a general sense. It's not unique or special, but aside from its departure from style conventions there's nothing overtly wrong with it.
Sm: Has a young maltiness, evoking wort. Plenty of residual unfermented sugars. Malty sweetness has a vague fruitiness along with notes of honey, flowery nectar, and pear. Hopping is modest in strength and floral in character. Clove. Some zest. No real yeast presence. I don't detect any alcohol either. Fermentation doesn't seem as clean as the Belgian yeast should make it. Hints of spiciness and biscuity malts typical of a Belgian style beer. I'm not finding the dark fruit notes found in the best dubbels; there's no plum, dates, figs, etc. Some toffee, I guess.
An unrefined raw aroma of moderate strength. Misses the mark inasmuch as adherence to the dubbel style is concerned. I'm optimistic.
T/Mf: Definitely raw and young as suggested by the aroma. Also somewhat reticent and muted; the depth of flavour is horridly shallow for the style. Even the flavour duration is disappointing; it's hardly got any presence at all. Plenty of raw honey and nectary notes provide a sweetness alongside the biscuity malts and Belgian pale malts. Has a vague fruitiness including unevocative orange zest, vague pear, apple, and barely noticeable white plum. None of the dark fruit you'd want in a good dubbel. Unrefined sugars abound. The flavour profile itself is pretty flat, bordering on bland, without much differentiation or development of flavour from open to finish. Not gestalt, but it does have a loose cohesion. Still, I wouldn't call it balanced. Feels thrown together without focus; I'm not certain the brewers were in control of this one. Has a minimal floral hop presence. Too sweet.
No explicit yeast character comes through. No alcohol or other off flavours are present.
Smooth and wet. A bit too thick, with a slight lumpy honey-like viscosity. Nicely carbonated; bottle conditioning was an excellent choice. Presence on the palate is poor; the mouthfeel does not accentuate the flavour profile nor does it even fully facilitate delivery of flavours. Texture suits the taste only generally; there is no evidence here of custom-tailoring the mouthfeel to the flavour profile. Body is neither full nor satisfying. Unrefreshing.
Not oily, gushed, harsh, hot, or boozy.
Dr: An amateur attempt at a complex style. It's drinkable enough, but I expect far better at this price point. I definitely wouldn't want this again, and finishing the bottle won't be particularly enjoyable. There's little here that works, even considering the beer apart from the style. I'd recommend Adelbert's throw out this recipe and start anew. If this is their dubbel, I'm very hesitant to try their quadrupel. Shockingly subpar. I wouldn't recommend this to friends or trade partners. Fans of the style should look elsewhere; this won't scratch your dubbel itch.
Aging might help slightly.

Poured into a snifter and got a dark golden/amber beer that was mildly murky and filled with plenty of carbonation. Its topped off with a nice thick tan head that quickly thins into a thin smooth layer of bubbles. Very thick lacing makes the ale look more inviting. Mild malt and hops aromas come through mixed in with plenty of sugar, apple and berry smells. Over all, the aroma is pleasant and sweet. Its medium bodied and really envelopes your mouth, there is a good bitterness to it and some spices are present up front. The malts come out well, I cannot taste any hops and there is a slight buttery flavor in its aftertaste. Over not a bad dubbel
