Conditioned on oak cubes used by Spirit of Texas Distillery to age their Pecan Street Rum, this ale has complex sweet oak, rum flavors with a warm alcoholic finish. Pair with dark chocolate desserts or bold cheeses.
The power of flight can be achieved through Zen-like focus and concentration. This ale will not help.

bottled on 10/4/19; today is 2/18/21. says batch 000

pours an amber-tinged mahogany body with a toasted cream foam head that has moderately low retention and leaves no lacing as it settles to an uneven halo around a patchy cap

aroma is rum and coke and oak. warm. pecan, maple, dark stone fruit (fig), and molasses with a spicy yeasty bready backer.

taste really plays with that rum and coke thing. little more citrus picked up in the taste.

mouthfeel is warm but fairly smoothed out compared to younger bottles I've had of this brew. carbonation is moderate and it is medium bodied. there are sparse carbo prickles, enhanced by the heat of the still lingering booze effect. finishes nonchalantly but leaves a root-like-near-black licorice aftertaste that plasters like bubble gum.

overall:
this is a really decent quad, especially if left to age a little. it's a little more complicated but still easy to read at this point, and has a bold but not overbearing character. well done!

Very sweet, but pretty good. Dark fruits, fig and plum, some oak. Bread and some yeast. The run is barely detectable. Not heavy. Pretty good, but you would never go for it over one of the classics.

Burgundy brown with a one finger tan head that dissipated quickly, leaving wisps of foam.
Lovely notes of rum raisin on the nose and palate. Hints of bready boozy molasses and oak. Some dark chocolate as it warms.
Well carbonated. Smooth mouthfeel. Nice dry wine-like finish.
Not as bold and complex as I would like for the style, but quite tasty nonetheless.
Bottled on 11/13/2015. A sturdy beer. That's a good thing.
