750 mL bottle poured into a snifter.

Appearance - Clear yellow body with a big head. Big individual bubbles. Looks very champagney. Nice collar and good retention.

Smell - Oak and some pale malts. Faint brandy and some sourdough breadiness.

Taste - Lots of sourdough bread and some dull maltiness. Brandy and wood linger and give it some astringency.

Mouthfeel - Very highly carbonated. Mediumlight body.

Overall - It's ok, but not interesting or necessarily pleasant. (478 characters)

Bright hazy straw-hued body. Fluffy voluminous head that shows great retention. Nose is initially very sulfuric, like boiled eggs. I let this one sit and breathe for an hour, and the sulfur reduced quite a bit to reveal more brandy and Belgian yeast character. Citrus, spice and oak pop out along with a bit of alcohol sting from the barrel. On the tongue it's especially barrel heavy, with big drying tannic oak and fruity brandy flavors taking precedence over the green apple and pear notes from the yeast. Despite the hefty ABV, the barrel and yeast drive this beer - there isn't much malt to speak of beyond a clean and simple base malt foundation. The mouthfeel is great, dry and bubbly, mildly biting from the oak and alcohol, cutting through any residual sweetness. Tannins and spice linger in the long finish. This was an odd one for me - initially bad from the strong sulfuric character that eventually gave way to a lot of complexity and balance. This could use more time in the bottle to clean up its off flavors, but if opened fresh I recommend letting it rest for at least an hour before pouring. (1,109 characters)
