L: Beautiful looking color. A yellow color just beginning , ever so slightly, to turn orange. One finger of head. Retention was good as was lacing. Head was creamy and rich. Hazy, but not overly so.

S: On the nose I get a slight malt note and some belgian yeast. Almost hay-like.

T: Pretty damn good. I get some citrus , almost like pineapple. I might be crazy but I also get a significant ginger flavor. On the end of the sip I pick up a tiny bit of lemony coriander. There is just a touch of clove. Pear esters going on, too.

F: Creamy with higher carbonation but nothing to bubbly.

O: Great beer. Easy drinking and rather refreshing. This is an interesting example of a Wit, I'd highly recommend it.

Pours nice yellow, straw color. A bit hazy. With fluffy white head. Just like I would expect for the style. Spicy aroma. May be a touch too aggressive, but pleasant nonetheless. Taste feels unbalanced - very heavy on the spices upfront, harsh after-taste, a bit sweet, but not enough for balance. Drinkable, but not enough to leave an impression.

I picked up the bottle at IGA at Ile Bizard on 11/9/2014. Should've paid more attention to the bottling date - 9/13/2013. More than a year ago. It was sitting too long somewhere. If I hold on to a beer for too long, I tend to skip reviewing, but since it was just taking too long through the distribution chain, I think it's fair game.

Now I have to admit I have always judged this beer by its label. And it's not a nice one (my own opinion here). It has always seemed cheap to me, like if someone printed it on a inkjet printer on some cheap Xerox paper in his basement. And I'm not the biggest witbier fan... so I wasn't exactly expecting much.

Poured in a Breughel oversized snifter. Now that beer has some major head. Not the kind that you have to wait 10 minutes before you can finaly pour the last of your 330ml in a giant 2l stein but a thick 2 and a half fingers that is there to stay with you for a while. And once it finaly goes down, one quick swirl brings it back immediatly to a nice inch or so. And talk about lacing! The wit presents itself in a light gold/straw color. Pale yellow when held up to a light. It really is fricking pale. Mostly clear with a bit of chill haziness. It has a solid stream of bubble coming from bottom of glass. Already forgetting about the crappy label.

Diving nose first, I get some straw/wheat, a fair amount of spiciness and slight sweet fruity yeast aromas. After reading the label I may be getting some chamomile and something that reminds me of apples.

To my suprise the taste is a lot more tame than the smell. Not simple by any mean but less in your face than the smell. I taste some nice subtle maltiness first mixed in with the spiciness. And the spiciness is not harsh like some whites. Orange bitter bark, bit of wheat and some citrusy notes. The hops are pretty much MIA and I may be getting ginger. Honestly, there is so much here that I am having a hard time making out the individual flavors. A real treat.

Now the only downside I can find is the amount of carbonation. Right on the sweet spot when the beer was just poured. But as the beer warmed up it seemed to fade off pretty quick. To the point where it was almost completely flat at the end of the 500ml. Could be the excessive effervescence coming out from the bottom of the glass. I should re-check the glass to see if it has some etching inside...

One of the greatest white beers I have had. As stated, I am not a huge fan of overly spicy wit biers but this one has a great balance of sweet and spicy. Buy it... Buy it now!

Bottled on 10/24/2013

A: A hazy pale straw on the pour with a solid billowly head that clings to the sides of the glass leaving plenty of bone white lacing.

S: Strong wheat scent with notes of lemon juice, yeasts and under ripe stone fruit with some pale spices of white pepper and coriander. Light sweetness on the finish.

T: Upfront acidic lemon juice followed by Belgian spicy yeast (coriander and white pepper) and wheaty bread. Middle notes of sweetness, possibly banana, and finishes with a crisp dryness.

M: Light bodied with a moderate carbonation. Finish is bone dry.

O: Crip and effervescent goes well with hot days an patios or even light seafood dishes. Notable for the light crisp mouth feel and refined sparkle, it's an easy drinker for when a light beer is the best option.

A - Nice golden colour, cloudy, with a nice bubbly head that sticks around for a while, nice lacing.

S - Very nice smell, fruitful with an awesome almost spicy aroma that is apparently chamomile.

T - The taste is good, somewhat let down from the smell, nice citrusy finish.

M - Smooth beer with a fair bit of carbonation.

O - Good beer, will definitely try the others by this brewer.

500 ml bottle to pint glass.

A: pale straw yellow with a two finger frothy white head that broke leaving a small film.

S: Belgian yeast, spices and fruits.

T: bubblegum and Belgian yeast. There is a slight clove tastre in the back as well.

M: medium carbonation with a lighter mouth feel.

O: Charlevoix is consistent with their beers, they are all on the mark, and Dominus Vobiscum Blanche does not break the pattern. This beer is light and refreshing. The Belgian yeast and the spices make for an enjoyable drink.

Appearance. Pours a hazy, bright yellow gold with three lovely fingers of frothy white head with amazing retention ...partly due to the etching in this Duvel tulip I'm sure. Very nice in any case.

Smell. Spicy and fruity Belgian yeast, ginger and clove, banana and light grains.

Taste. Bubblegum and light spicy Belgian yeast, a little ginger and light wheaty malt. Quite delicate flavours which I didn't expect after the fairly strong aromas.

Mouthfeel. Medium-light body, medium+ fine carbonation.

Overall. Nice stuff. Would be fantastic on a hot day out on the deck.
