This dry saison brewed with sweet, bright Meyer lemons and chamomile, was made in celebration of the wedding between Carl (a cool dude who knows how to sling some insanely fresh fish) and the lovely Jaimie. We're hooked on it. Now, we're not just casting you a line here, chamomile and saison yeast are a perfect marriage, and the Meyer lemons add to the al-luring bouquet. Our most (in)sincerest apologies for all the crappie fish puns.

A - White foam settles to a thin collar, leaving behind wisps on top and a few specks of lace. Hazy golden straw body.
S - A tad soapy for me, with notes of white pepper, phenolic yeast, and lemon. Very spicy yeast profile, and it overwhelms the other elements a bit.
T - Taste is a bit sweeter, revealing some of the malt profile of lightly toasted, honeyed, grains. Yeast moves to the periphery to the beers benefit and the listed chamomile puts in a fleeting appearance. Not perceptible alcohol.
M - Feel is my favorite thing about this brew. Medium bodied, with a crisp, dry texture, and soft yet active carbonation. Again, no obvious alcohol warming.
D - Tastes better than it smells, but merely OK in my book on the whole. It was pretty easy to drink considering it sits on the higher end of the ABV spectrum for the style. Perhaps a slightly lower fermentation temperature or different farmhouse strain would clean things up a bit.

Bottle purchased in Chicago approx. 3 months ago. Kept dark and cold.
Appearance: Thin, yellow, slightly cloudy. Lemonade. Very little head that dissipated quickly.
Aroma: Necco wafers. Very little Belgian aroma, maybe a hint of spices? Chamomile gives this a medicinal edge.
Taste: Necco wafers. Lemon Necco wafers. And then, BAM, chamomile. Like eating hard candy at Grandma's house and then chewing on her potpourri bag. It is very, very hard for me to find a beer that I can't find something enjoyable in. This one starts out tasting like slightly lemony sugar wafers, then gives you a very slight Belgian yeast wash, but it's all over-powered with chamomile- like you chased a bad lemongrass Saison with cold chamomile tea. Not even sure this beer was brewed with hops.
Mouthfeel: Thin. Watery. No hint of malt body. Just bad.
Overall: A good example of what can go wrong when building a Saison. Chamomile & lemon sound good, right? This beer reminded me of those days when you're forced to drink your 500th cup of chamomile tea to soothe your flu-ridden body. Not fun. Not fun at all.
Well, made it through almost 7 months of 2014 w/o a drain pour. That streak ended with this beer.
