Head Brewer Christian Koch fell in love with this style after visiting the beer halls of Cologne and brewed our 8 Second Kölsch to be a true representation of this easy drinking, crisp Ale. We first brewed this beer as a specialty beer for our local county rodeo, and it quickly became a local hit. This is a beer that will find a place in craft beer destinations and cowboy bars alike, and is perfect for those looking for an easy drinking everyday craft beer.

Continuing with the beers I purchase from Elevation, I selected a Kolsch. I am using a Bruery Stange glass, and the temperature is 44 degrees. A semi-hard pour did create a frothy and airy two-fingered head with above-average retention. The slow dissipation left loads of lacing on the glass. Examining the color, I charted it at SRM 2, pale straw yellow. The clarity of the beer is bright, with lots of carbonation activity. The appearance of the beer is above average.
Nosing the glass, I detect crackers, floral esters, a slight malty sweetness, yeast, and a touch of grass. The nose is clean and according to the style.
I taste crackers, slightly toasted malts, floral, grainy sweetness, a hint of sulfur, and floral. The flavors are spot on with this style. The sulfur is light and hard to find at times.
The mouthfeel is dry yet finishes crisp. The body is light, and the carbonation is medium-high.
This beer is fabulous. I could drink several of these, especially since it was hot outside.

Poured from a 12oz can, canned on January 10th 2022
On the pour a beautiful pillowy white 2 finger head formed on a light straw body that is crystal clear with very light and lazy carbonation. The head does recede rather quickly but there is a decent attempt at some lacing.
Aroma is very yeast forward but still quite light, a good sign for a traditional kölsch. Unfortunately there is a bit of skunk in the hops, nothing like a clear or green bottled beer but it's there. A slightly sweet crackery malt is on the very back, with an almost honey like quality.
Flavor follows the aroma quite closely with a decent amount of fermentation character coming through on the flavor. The skunk amd a slightly alcoholic estery flavor as well as a possible trace of does come through before it gives way to a honeyd crackery malt flavor that sticks around for a while making for a nice transition. Definitely a more yeasty take on a kolsch but there are some off flavors.
Feel is quite crisp amd drinkable to style. A bit light and a deceptive amount of carbonation bite. Almost perfectly refreshing but the diacetyl throws that off a bit. Medium finish but nothing bad hangs around just sweet mouth coating malts.
Overall this is a decent attempt at a traditional kölsch, and it's reasonably tasty, but there are some things off about it. It's not perfect but it is decently refreshing and if it was a bit cheaper then it would be hard to judge this harshly, but it really should be a bit cleaner.

Day 20 of the advent calendar 2021.
What a disappointment. Pale, almost watery yellow with not much aroma.
The flavor is of mineral water and a touch of malt sweetness.
It took 8 seconds to decide that there are far better kolsches out there.

Pours with large bubbles and creates a small white tight head that quickly settles to a thin blanket. Beer presents a medium yellow color with fine bits in suspension obscuring a totally clear liquid.
Bread and yeast with a hint of bubblegum on the nose.
Smooth somewhat buttery mouthfeel with some yeast on the palate and sweet hint of bubblegum. Finish is slick and medium bodied with low carbonation. No hint of bitter hops to dry out the finish.
Nice medium bodied smooth brew that should appeal to folks looking for a sweeter direction, without really being too sweet overall. I would prefer a bit more carbonation and a dryer finish, but I am not familiar with this style, still learning.

Pours very light gold. A tiny tiny bit of sediment floating; otherwise, clear. Slight pear/grape/white wine/apple juice aroma. Taste is clean with hints of slightly sweet grain. White wine creeping through. Feel is medium high carbonation with a fairly dry finish. Overall, a clean example of the style that is rather easy to drink.

12oz can gifted to me from a friend. Canned on 11/19/19
Served in a nonic pint glass.
Look- Slightly hazy golden straw color. massive off-white head that slowly recedes to a thin cap of foam, moderate lacing. Active carbonation streams visible.
Smell- Honey and grainy malt, sweet fruity citrus zest, herbal/floral notes.
Taste- Follows the nose for the most part, citrusy sweet and grainy with a light hoppy back end.
Feel- Light bodied. Sweet and creamy with a semi-dry, almost no bitterness to speak of. Moderate/light carbonation on the tongue.
O- A killer kolsch, folks in Colorado have the German style beers on lock. Definitely worth trying if you see it.
