This beer is retired; no longer brewed.

Heirloom Cider/BerlinerWeisse. A rather sour and bright indigenous ale! Fermented with lactobacillus and our house Saison yeast. 49% of the fermentable sugars came from Tom Culton’s estate cider comprised of Heirloom apples, pears, and quinces.

I've learned that Tom Culton's actual full name is: "The Mystery That Is Tom Culton." (Name of future collab brew?)

Golden yellow pour, slightly hazy, with a finger of fizzy white head that srizzled out of existence within seconds, though a few bubbles rose from the bottom of the glass at random. Appropriate for the style in general. Aroma of toasted wheat, mildly sour, hints of the cider fruits: apple, pear, quince. Similar taste, base of toasted wheat and husky grains, a moderate sour twang, apple, pear, quince, lemon juice. Light body, crisp, prickly mouthfeel. Nice brew overall, though my preference was for CultonHop. (655 characters)

Thanks to Slatetank for hooking me up with this. Growler poured into a matching Tired Hands wine glass. The brew appears a polished clear golden yellow color. A finger of white froth comes out of solution and forms a cap that quickly and audibly dissipates.

The aroma is quite clean with an earthen grain element that is wheaty and also includes some slightly lemony lactic character. More sniffs reveal a fruit quality like apples and pears.

The flavor is fruity and tart with lemony lactic quality blending into apple and pear-like fruitiness. There is a graininess present like wheat but slightly dusty and earthen with a soft aspect that is slightly bretty.

This is a light bodied brew with a modest amount of carbonation. Overall a solid representation of the style despite a large portion of the fermentables coming from a non-traditional source. Really nice, get this before its gone. Thanks again Slatetank for sharing. (930 characters)

I had this on tap served chilled in a half pint at the cafe upstairs.

the color is golden pale hazed no haze as expected with no head, however my brother had it and it had a thick white creamy cap -go figure. The smell is tangy apple with white grape sour notes and floral sweet aroma- pear? The feel is good tangy with moderate carbonation with a mix of sweet and sour with dry finish.

The flavor is great...lots of apple and green apple tartness with tangy yeast and lemony edged w/ semi sweet finish which has the fruitiness of the cider component and finish is mild with some lactic notes from bacteria and a light yeast taste. Overall A great berliner hybrid with cider the flavor of both come through. (712 characters)
