500 mL bottle poured into a snifter.

Appearance - Orange amber body. No real head. A few bubbles at the edges. Very faint surface wisps.

Smell - Oaky and winey. Lots of white wine. Acidic smelling. Some mustiness along with fruitiness.

Taste - Much more sour and very plummy. White wine is a little diminished. Plum in the aftertaste and some oak.

Mouthfeel - Pretty tart. Medium light body.

Overall - Very tasty. I could drink a lot of this.

A - Pours a clody brown-plum color with a fizzy light tan head that fades to a thin film.

S - Funky, wine, plums.

T - Very tart and acidic, wood, plum finish with some wine.

D - Lower to medium carbonation with a medium body.

O - Tart and funky with lots of wine and plums.

First had: bottle from the source

Poured into a TH over-sized wine glass, a hazy golden liquid with a ruby tint to it. An aggressive pour yielded little to no head, just a few straggling bubbles on top. Gah, like an idiot, I opened it too early. But if the lack of a head was the "worst" thing about this beer, then I don't see the problem. The nose was quite vinous, twinge of sourness, pulpy dark fruits. I actually wasn't expecting this beer to have the level of sourness that it did, but, well, it did. Nice vinous notes right from the start, tangy and woody, red grapes and plums, mild tannins, with a subtle grassiness underneath, backed up by a crackery grain base. Lots of flavor, lots of complexity, even without the full carbonation. Medium body, crisp and acidic. Not sure how long this will take to hit "the sweet spot," but I'm guessing that in a few weeks when it's carbonated fully, there really won't be a need to let this one sit around on the shelf much longer.

This beer kind of harkened back to Tralfamadorian, but the overall feel in OotE was a lot lighter, and there was more balance to it. Can't wait to try it again in a few weeks once it has conditioned properly.

Edit: Opened another bottle over two months later. Carbonation is still low, but it wasn't nearly as borderline-flat as it was before. A thin white ringlet held around the rim. Other than that not much else changed. Still very tasty.
