This beer is retired; no longer brewed.

Spontaneous saison fermented in a used rye whiskey barrel which previously held spontaneously fermented cider pressed by our dear friend Tom Culton. Only 10 gallons produced. Notes of bright lemon, kumquats, sour white grapes, and vanilla.

On tap at TH.

Cloudy, pale yellow pour with a thin white head. Funky, yeasty aroma (bretty?), spicy fruits, grape, pear, apple, maybe some earthy barrel notes, but really nothing that indicated "whiskey," which it seems was just meant to be a very subtle element in the beer. Tangy on the palate, juicy and fresh, citrus pith, apple, pear, white wine, earth, yeasty funk, faint vanilla sweetness. Again, there was really no whiskey I could detect in this, and seeing how it was a second or third use barrel, it wasn't surprising. Crisp and tart right to the end...possibly the most successful tartness "profile" that has come out in a TH beer. Light-medium body, juicy mouthfeel, clean and refreshing, yet still assertively tart. Kind of like a much better version of CultonSour.

A - Pours a hazy light orange with a hige off-white head that fades slowly.

S - Brett, swwet floral, peach. Very pleasant.

T - Tart fruity Brett, then some soft floral and peach notes. Nice.

D - Good carbonation with a light body.

O - Nice mix of Brett and tart fruits.
