Thanks go to tenderbranson69 for sharing this growler with me, enjoyed chilled from a tulip.
The look is milky like rice pudding almost very thick appearance with white cap and fine bead with stringy lace pattern - about what I expected based on the name. The smell is excellent-lots of citrus aroma and mellow tropical complimentary odor with the hops having a mild floral/pine juxtaposition as it warms. The feel is very good I am sure I have had spelt in other beers but it really adds a smoothness here with an almost cask-like quality in the feel light bitterness and almost no alcohol detectable with fruity spicey and medium carbonation with very dry astringent finish.
The taste is very good with a lemon-lime and slight sweet malt in a kind of see-saw way which is dominant depends on the individual swallow with a more bitter aspect as it warms with nice acidity level and gentle citrus flavors lingering. Overall I think I enjoyed this more than the Third Level it starts out somewhat meek but the gradual transition is pleasant and this is very drinkable.

Spelt Double IPA. Hopped intensely with Motueka, Galaxy, and Nelson Sauvin.
Burnt orange in color, murky as hell, pretty much completely opaque, with a dense collar of foam that retained as such, lacing the glass slightly. Not sure why, but I found the aroma here to be pretty subdued, light notes of citrus and pine, thick with sweet malts, but not to the point where they overran the hop profile. Taste was much better I thought, citrus juice, pulpy, dank, overripe melon and pineapple, piney and herbal hops, super dense bready malts, but much like the aroma, the hops were clearly in charge here, as they should be. Medium-full body, smooth mouthfeel, with a mild but lasting bitterness. Nice!
