Notes/Commercial Description:
This is a Cabernet Franc barrel-fermented Ale that I brewed with wheat malt at Tired Hands Brewing Company. At this point, Parageusia1 is roughly nine months old. The yeast used to ferment this beer is a melange of yeast cultured by Tired Hands Brewing Company as well as yeast and bacteria resident to Ardmore, Pennsylvania. I believe that people of this time may refer to my Ale as a "Saison" or perhaps a "Wild Ale". Archaic stylistic descriptions aside, this is an Ale that I find to be very engaging and enjoyable; Bone dry with a bright citric acidity and a refined stone fruit presence. Also, it is suitable for indefinite aging into the future.

It was very important for me to design a series of beers available for the current market that accurately represented the level of sophistication and Future Rusticity that people of my time have come to expect from Parageusia. It is my hope and sincere desire that, through these collaborations with Tired Hands, we will build a more evolved level of beer appreciation in this time (the present) to prepare the people of Earth for the intensity of organoleptic refinement of my time (the future).

500 ml bottle poured into flute

A- A cloudy golden straw color with a two finger whtie head.

S- Sour, nice barnyard funk, white wine/grapes, oak, some peppercorns.

T- Sour lemons, grapes/white wine, oak, some earth funk, very nice balance.

M- Smooth, crisp, dry, light body.

O- Nose is funkier than the taste, awesome sour, very well made. Worth the wait in line, would love to see them brew this again.

Pours hazy and a bit chalky pastel yellow with a scant head of perfectly white foam. It falls but then resists the fall by refreshing at every tip of the glass and leaving a ring and film. Nose is headdy with barnyard. Not down and dirty barnyard, more like classy barnyard. Very funky but not off putting. The malt on the nose shows up only after it warms and is a sweet bit of lightness. Fruity lively and sour. The sour verges on vinegar but stops magnificently at floral. Bright with citrus and a sweet bit of mango to come forward from the background. A light breath of the oak and wood barrel and a fragrant hint of vanilla. A light floral overall.

The taste is outrageous. Bold bright and vivid. Puckering sour citrus fruit and barnyard funk dance across the palate with a bubbly and lively carbonation. The palate is fully engaged when a decadently sweet and sumptuous mango comes forward form the background to cast a bit of lush sweetness into the drink. The malt is but a breath that lies deeply in the drink, a tiny bit of weight and substance, a small sweetness that is not from fruit. Smooth crisp and very dry. There is a very small vinegary taste in the finish just enough to excite you once more.

This beer has a delicate texture and yet a very bold flavor. I find that a good sour makes me feel happy. That is what this one did. Thank you Larry.

500 mL bottle poured into a snifter.

Appearance - Hazy yellow body. Small white head. A few bubbles at the edge.

Smell - White wine. Acidic. Herbal. A little pale malt. A little wood.

Taste - Pretty sour. Lemon citrus. Herbal character is lighter. Lots of white wine. Sourness reminiscent of De Garde's yeast profile.

Mouthfeel - Pretty sour. Medium body. Well carbonated.

Overall - Excellent. Great wine barrel. Interesting sour profile as well.

500 ml bottle, served into a matching Parageusia gold glass, oh boy!

A: Moderately hazy golden straw colored beer with a pure white fluffy and foamy head that slow recedes. Lacing was adequate, a bit more and this would have been a perfect looking beer.

S: Wine, oak, funk, tartness, grape skin.

T: Waves of immediate tartness from the base saison and bugs, dry wine, oak, vanilla, a mild citrus aspect akin to some lemon.

M: Soft and well carbonated, finish is dry with some residual notes from the barrel.

Unbelievable beer from Tired Hands. For me, this is the best they've done, and easily without question stacks up against the best wine barrel saisons on the planet.
